Creamy Chicken Rice Soup

This was delicious! I doubled the recipe, added morel mushrooms and fresh, pressed garlic to the carrots, celery and onion mixture, and sauteed them all in a combo of 2 Tbsp EVOO and 2 Tbsp butter. I added 1/4 up of white wine after the flour was mixed into the veggies, right before I poured the broth into the pot. I finished it off with 3 cups of cooked rice (remember I doubled the recipe) and 1 1/2 cups 2% milk and 1/2 cup of heavy cream. I omitted the lemon juice altogether. Very kiddo friendly:) Yummmm!

Chili From Scratch

So much better than chili with canned beans! I used a full pound of ground beef, instead of adding 1/2 lb of stew meat. I used freshly canned tomatoes and added a little extra beef broth. Since it was still a tad thin for out taste, I added a small can of tomato paste. As per other reviewers I soaked the beans overnight in a pot of water. Oh yeah... Keep the lid on the pot when simmering (unless you like SUPER thick chili).

Vegan Split Pea Soup

This soup is plain ole' good. I chose to leave out the barley and potatoes, and doubled the thyme and basil. I wish I had made a double batch!!

This was perfect! I will definitely use it from now on. I did add a tsp. of seal salt, but other than that, I remained true to the recipe. I total replacement for those preservative filled packets.

Chocolate Turtle Cheesecake I

This is supremely excellent! The chocolate cheesecake is silky and rich. The carmel is a perfect creamy consistency. All you could ask for in a turtle cheesecake:) The very minor changes I made after reading several reviews, were to add 2 extra tbsp of butter to the crust, and I used 2 10.5 oz. pkgs of Werther's Chewy Caramels mixed with 1/2 cup evaporated milk. Oh yeah...Make sure you push the crust up the side of your springform pan at least an inch so the caramel won't stick to the pan.

Whole Wheat Banana Nut Bread

This was VERY bland! I even added cinnamon:( I know it defeats the purpose of a healthier bread, but it defintely needs sugar. For a "health" bread it was okay.

Spicy Rapid Roast Chicken

Jessie's Poppy Seed Dressing

Excellent! I cut the oil down to 3/4 cup, and lowered the amount of sugar to 1/2 cup. I threw everything in the blender, not even bothering to grate the onion, just chopped it a bit. Yummy on a bed of romaine, strawberries and pecans!!

Outrageous Chocolate Chip Cookies

These are soooo good! The only thing I did differently was double the vanilla, and I used milk chocolate chips instead of semisweet. I made a double batch...and I'm glad I did, because these were all gone in a day!!

Jessie's Stuffed Shells

This was a great dish. I did make some changes to suit our preferences though. I addes a package of frozen chopped spinach (thawed and drained well) to the filling. I also combined 1 1/2 cups of beshemel sauce (3 tbsp. butter melted over med-low , 3 tbsp. flour added and brought to bubbly for 1 minute, add 1 cup half and half, 1/2 cup milk, stirring constantly, bring to just about a boil) with 2 cups of pasta sauce, instead of the 28 oz of plain pasta sauce. I combined the "new" sauce with the mushrooms, which I sauted in a little butter for a couple of minutes, and omitted the parmesan and mozzarella in the sauce, as the beshemel made it plenty creamy. I baked it for 40 minutesd covered, then pulled the foil off and added the 8 oz of shredded mozzarella. I then baked for 15 more minutes. Super good!

Jessie's Lemon Bars

These were excellent! I took the advice of the other reviewers and doubled the filling, with the exception of tripling the lemon juice (definitely use fresh sqeezed), and using 1 3/4 cups of sugar. I also doubled the crust, but would not recommend doing that. It makes the bars taste more like shortbread than lemon, and the crust gets soggy if you don't eat them all immediately. I decreased the cook temp to 350 as suggested, and baked the crust for 12 minutes, then the whole thing for just under 20 minutes.

Amish Macaroni Salad

As written this recipe is possibly a 3 or msybe even a 2. Thankfully, I took the time to read a lot of reviews. I cut the sugar way down to 1/4 cup, halved the mustard, used a full 16 oz box of shell pasta, used celery salt in place of celery seed and salt, and added an extra egg. Doing all this made this recipe into a 4! I may be tinkering with this one again...

Meatball Nirvana

These were terrific! Perfect for hearty meatball subs. I doubled the recipe, cut way back on the pepper flakes (as I had littles to feed), and used panko for the breadcrumbs. They were the perfect texture and held up well on our portugese rolls.

Lentil and Sausage Soup

Yummy! I used Italian style tomatoes, subbed tomato sauce for part of the water, used double the sausage, and left out the pasta. My picky son ate two bowls! Gotta love that!
