Bacon, Spinach and Turkey Enchiladas

I made this the other night for dinner. We have a standard enchilada recipe so it was nice to switch it up. We used chicken breast diced finely, pico de gallo as suggested in the footnotes, and left out the jalapeno since we are spice wimps. This turned out very flavorful and full of nutrients! I will be making this again, although I may substitute broccoli for the spinach as my husband and son are not huge fans of the leaf. This recipe is easy to adjust also to what you have on hand or preferences.

Meghann's Chicken Scallopini

I just wanted add a note to my recipe. Two important steps were changed when the recipe was published so I want to clear that up. I brown the chicken in the skillet, cover with foil and finish it in the oven so I have time to caramelize the onions. I don't fully caramelize them as that would take a while to do, but I cook them for a lot longer than "soft and translucent" to get more flavor from them. They should be pretty mushy. We also like the dish a bit more garlic-y now, so I add a good bit of garlic powder to the cream sauce as it is thickening. Thanks for trying this recipe! I hope this info is helpful :)

Savory Herb Rice

This was a great side dish for our pork chops tonight. I will definitely be making this again. I used fresh onion instead of dried because I don't have any and accidentally added garlic powder but how could that be wrong? In the future I will be making it with brown rice.

Tartar Sauce IV

I made Tartar Sauce I the other day and gave it five stars even tho I made some changes. Now today looking at other recipes (because I'm going to make it again) I found that the changes I made match this recipe almost exactly. So anyway, this recipe is a hit in my house.

Twice-Baked Mashed Potatoes

We loved this recipe. I prepared my potatoes with sour cream and left out the green peppers because my boyfriend doesn't like them. I also used colby/cheddar cheese crumbles instead of shredded and it was so good. My 10 month old son even gobbled these up!

Horseradish Sauce

I made this last night to go with the steaks I made for dinner. I made a few changes only because I didn't have all the ingredients on hand. I used lemon juice instead of vinegar and dijon mustard insead of mustard powder. Since I was using it as a sauce I added maybe a teaspoon or two of milk to thin it down a little bit. If I was using it on a sandwich, I'd skip that next time. I still give it five stars because mine was great so the original must be great too!

Tartar Sauce I

I loved this recipes. If I had realized before that making tartar sauce was this easy and delicious I would've been making it forever. I used chopped dill pickles instead of relish because I didn't have any and maybe just a splash of lemon juice because I didn't want it too runny. It was great and I will never buy store bought tartar sauce again.

Garlic Mashed Potatoes Secret Recipe

I made this at Christmas time and it was so good. Bordering on perfect. It's been buried in my recipe box and I totally forgot about it! One person said it was too much garlic for them, but you can't make everyone happy. Next time I'll make it with roasted garlic.

Daria's Slow Cooker Beef Stroganoff

I use this recipe pretty much as is. Only changes I make is I use beef stew meat, 8 oz sour cream, no mushrooms (soup is enough for me), and I don't measure anything. If it looks like enough it probably is. Never had any problems that way and I love this. In fact I'm making it tomorrow.

Easy Shepherd's Pie with Garlic Romano Potatoes

Tried and true. I use this recipe every time. Rosemary was the missing ingredient in my old Shepherd's Pie recipe. Sometime instead of the Garlic Romano Potatoes, I use plain mashed or sometimes hashbrowns. Good any way you choose.

Ultimate Twice Baked Potatoes

We made these one night and they were really good. I should've let them cook longer because the flesh was really hard to remove and resulted in some gaping wholes. Next time we'll get the assembly line going and make them look really pretty. Perfect recipe tho!

Savory Garlic Marinated Steaks

I have used this recipe again and again. I use smoked salt instead of liquid smoke but this recipe is an ace in the hole. If you don't like it salty try a low sodium soy sauce. I've never done it because we like our food a little salty but I might if I made this for company. And I think this could also be a crowd pleaser.

Slow Cooker Ham

I make this ham all the time. So simple and it comes out falling to pieces (which is what it's supposed to do) and deliciously sweet. Only thing I do different is to put the brown sugar in about 1 cup of boiling water. You really don't need to do that I just like a little liquid in there to get it going but the ham will make enough liquid to cover itself. I get a whole smoked (totally cooked) bone-in ham from the farmer at the market. I haven't ever looked but you could get that at the grocery store or local meat market too. I don't know what a "picnic" ham is but I really wouldn't suggest a pre-sliced ham. My mom grew up on an Iowa pork farm and says this is just like her mom made. Please don't think that this recipe will result in a ham that would be on the cover of a magazine. It's all about the natural flavor of the ham here.

I made this once and really liked it. It uses an ingredient I don't normally have in the pantry so it takes some pre-planning but it's worth it for a good side dish.
