Delicious introduction to eating kale! Very easy to put together after a long day of work. We had it with grilled London Broil, it tasted like we were at a steak house! Thank you for sharing. By the way sorry for the upside down picture, can't seem to edit it..

Five-Cheese Stuffed Shells

This is a GREAT recipe! Only change I made was to use 2 cups or ricotta and skipped the cottage cheese. Also a pinch of nutmeg is a nice touch :)

Zucchini and Potato Bake

A wonderful recipe, came out perfect! I made a few changes..I used Italian Breadcrumbs and added 1/4 cup of parmesan per others' suggestions (also omitted the paprika). I left the skin on the potatoes. I added an extra clove of garlic to the veggies. I also added a medium onion, large dice. Tossed all the veggies first in oil in a large ziplock, then in a separate ziplock, tossed the veggies in the breadcrumb mixture (tossed in two batches to ensure veggies were evenly coated). I am looking forward to making this again this weekend as a side dish for a BBQ!!

Tiramisu Layer Cake

May I just say WOW to this wonderful recipe! My husband and I ate half of the cake this weekend by ourselves! I did take others' advice, and make two layers of the cake with the coffee powder, also mixed the 1/4 cup brewed coffee with 2 tablespoons of the liqueur instead of 1..turned out perfectly! I think I will include this in my Thanksgiving menu.

Portobello Mushroom Burgers

These were spot on!! The marinade turned out perfectly. I did add slightly more olive oil (a tablespoon or two) but other than that, followed the recipe exactly. I served it with a slice of tomato and a leafy lettuce.

Chicken, Feta Cheese, and Sun-Dried Tomato Wraps

Great recipe! I didn't have wraps or the sundried tomotoes, so I cooked the chicken as directed. I cooked white rice in chicken stock, after rice was cooked I added some feta cheese and spinach, then topped with the chicken and extra sundried tomato dressing. Made a great lunch for two!

French Onion Soup Gratinee

I am sorry to say I really did not like this soup.. It tasted a bit off. Could be the wine I used, not sure. Also, are red onions typically used for French Onion Soup? I think that may have been part of the problem..

Lisa's Easy Chicken

This is great but I agree with others that garlic powder should be used instead of garlic salt. It was still yummy even though it was a bit too salty! I used chicken strips instead of cutlets, to make it more "fajita" -like. Also used about 2/3rds of a large can of diced tomatoes (drained) in place of regular tomatoes. Turned out pretty good!

Roasted Vegetable Lasagna

Wonderful recipe. I did add an extra clove of garlic to the roasted vegetables, also extra mozzarella to the lasagna. For added flavor, the tomato sauce I used was Bertolli's Tomato & Basil. Complimented the vegetables very nicely :)

Hearty Spanish Rice

This was a decent recipe with some potential. I made a couple of changes. I sauteed the onion for 5 minutes, then added the garlic and sauteed for a minute or two before adding the chicken. I also added a jalapena pepper (finely diced) with the pasta sauce, etc. Rice did come out a bit too watery, next time I may cut down to 3 cups and see if that helps.

Mexican Bean Salad

Great recipe. Has a bit of a kick to it. I ate it for lunch with some pita. I may cut the recipe in half next time and try adding a whole wheat pasta to it to make it a pasta salad. I will try this at the next family barbecue!!
