Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Feb. 9, 2011
Really good. I loved how quick and easy this was. I followed the recipe as is with the exception of reducing the amount of cayenne (have small kids). I think next time I will add italian sausage or shrimp. As for the runniness of the sauce - if you let it cool for a bit it thickens right up.

The Best Parmesan Chicken Bake

Reviewed: Jan. 24, 2012
Let me preface this by saying that I did change the method in which this recipe was put together, but did not alter any of the ingredients or quantities. The bad reviews for this made me not want to try it, but I thought I would give it a chance anyway. It seemed odd to me to layer the bottom of the baking dish with garlic, oil and red pepper flakes so instead I sliced the chicken breast into 1" strips and browned them in the olive oil along with the garlic. I sprayed the baking dish with Pam and then added the chicken/garlic mix and then followed the recipe as written. I also crushed the croutons into pieces slightly larger then crumbs. The flavor was phenomenal, however, I also used homemade spaghetti meat sauce in place of the marinara, which may have enhanced the flavor as well.

Fudge Brownies I

Reviewed: Jun. 25, 2011
I don't typically make changes to a recipe the first time I make it, but after reading the first two reviews I decided to take their advice. I used 6 oz of chocolate and 2 eggs as well as baked them in a 8" square pan. With those changes these are absolutely the best brownies I've ever had. I've made this recipe twice and both times these were awesome! The first time I made these I thought they were a bit greasy though, so the second time I reduced the butter to 1 1/2 sticks as well as reduced the sugar by 1/2 cup. They were still great. My one piece of advice would be to not trust the toothpick test. I tested the brownies after 45 min, 50 min and 55 min and each time the toothpick came out dirty. I finally pulled them out of the oven after 55 min and while they still tasted yummy they did over bake. Next time I will stick t the 45 min rule and pull them out regardless of how clean/dirty the toothpick is.

Jackie's Special Meatloaf

Reviewed: Jul. 24, 2008
I give this recipe a thumbs up. I am not a big fan of meatloaf, but I tried this recipe and it was really good. I took the advice of one of the other reviewers and did one part bbq sauce, one part ketchup and one part worcestire sauce instead of ketchup alone. It was very good.

Peppered Shrimp Alfredo

Reviewed: Oct. 17, 2010
I loved this! I followed the recipe very closely, although I did omit the cream. It just didn't seem like a necessary ingredient considering I had already used a jar of alfredo sauce. It had a very good flavor. It was kind of cross between Stroganoff and alfredo as it did have a strong mushroom flavor. Don't be turned off by the color the sauce turns after adding the mushrooms. It didn't look very appealing, but it was very good.

Pumpkin Pie Bread

Reviewed: Dec. 26, 2010
Great flavor. I followed the recipe as stated. I think for my oven it needed to bake at a lower temperature for longer time. I baked my loaves for about 70 - 75 minutes and the outside got dark and slightly crusty. It still turned out great though. I will definitely use this recipe again.

Home Made Top Tarts!

Reviewed: Mar. 20, 2010
These came out better than I expected. The recipe is super easy and I will make it again. The only I change I'll make next time is to try a different frosting. I found the one in this recipe to be way too sweet. They probably would be plenty yummy plain too.

Spicy Shredded Beef

Reviewed: Oct. 23, 2011
This was ok, but I think it lacked flavor and there wasn't anything in it that was spicy as the title would have you believe. If I make this again I would probably use rotel in place of the diced tomatoes since I think it would give it more flavor.

Southern Pulled Pork

Reviewed: May 28, 2012
I have made this recipe approximately 5 times and have always made it as written. The most recent time I made this dish I opted not to brown the meat or onion/garlic mixture. I just threw everything into the crockpot and let it cook. It turned out just as well as when I do brown the meat. I will continue to make this recipe, which I always pair with the Bourbon Whiskey BBQ Sauce that can also be found on AR.

Tomato-Cream Sauce for Pasta

Reviewed: May 7, 2012
This was pretty good - the only change was that I used plain diced tomatoes instead of italian style since I already had those in the cupboard and I pureed the tomatoes mixture. I found it to be a bit bland so I may play around with the spices a bit next time, but it could also have been because I used plain diced tomatoes.

Southern Candied Sweet Potatoes

Reviewed: Nov. 26, 2011
Flavor was good, but there was an awful lot of liquid which I ended up cooking down. I do think the potatoes need to be cut very thick as they will fall apart if too thin.

Swiss Sherry Chicken

Reviewed: Sep. 22, 2009
This was really really good. My husband hates cream soups so I wasn't sure that he would like it, but after we were done eating tonight he said this recipe is definitely a keeper. The only change I made was to crush up the croutons. Next time I will probably use less of the mushroom soup since we had a ton of sauce leftover.

Low-Fat Blueberry Bran Muffins

Reviewed: Jan. 20, 2014
These were great! We liked them a lot. My only criticism is that we are at high altitude so they didn't puff up like a muffin normally would. I think next time I need to add some extra baking powder.

Slow Cooker Scalloped Potatoes with Ham

Reviewed: Dec. 5, 2011
I really liked this and thought it was really simple to make. The only change I made was to omit the salt since the cream soups tend to have quite a bit to begin with. I didn't think it needed it either. I'll definitely do this again and may take the advice of the other reviewer who suggested using polish sausage in place of the ham.
