All Day Macaroni and Cheese

Spiced Coconut Coffee

I hate to give this such a bad review, but I was really disapointed in the result. I love spice and coconut so I was really excited to try this, but it just wasn't very good. I followed everything as written, however I did use lite coconut milk, which may have made a difference. I didn't think it had much of a flavor other than coffee with a bit of spice. The coconut wasn't very strong and I didn't taste the clove or cinnamon at all. It may have been that the coffee pot brewed so quickly that the spices didn't have a chance to filter through. I won't make this again.

Pork Medallions

Yum! Followed the recipe except that I omitted the savory because I didn't have any. This was fantastic and will likely be moved into our family's rotation of monthly meals. Very good! Served with garlic mashed potatoes and carrots.

Blackberry Cobbler

Roasted Chicken with Risotto and Caramelized Onions

This was decent. I have never had risotto before so I wasn't sure what to expect. I did add mushrooms and a bit of garlic as other reviewers suggested. I also cooked two chicken breasts on my Foreman grill as another review suggested and I seasoned the chicken with garlic powder and seasoning salt. My husband and 3 year old did not care for it, but my 6 year old liked it. I would have to agree that the balsamic is a bit on the strong side and can definitely be reduced. The cooking time was also off as this did take about 45 minutes for the rice to absorb the fluid. I probably won't make this version again, but I am opening to trying different versions.

Acorn Squash with Apple

This was good. I have never had acorn squash before, but I liked it cooked this way. I did bake in the oven according to the alternative directions. It smelled the house up like apple pie. I used a white acorn squash because I wasn't sure which one to buy. They are small so the apple chunks far outnumbered the squash.

Spicy Shredded Beef

This was ok, but I think it lacked flavor and there wasn't anything in it that was spicy as the title would have you believe. If I make this again I would probably use rotel in place of the diced tomatoes since I think it would give it more flavor.

These are great! I did add a touch of vanilla extract and nutmeg. It took about 45 minutes for the liquid to evaporate which was a lot longer than expected.

Chicken Nuggets

Simply amazing. I will absolutely make these again. I used panko bread crumbs in place of ordinary ones. I was tempted to add some garlic, but decided to follow the recipe and am so glad I did. These were really good. To try and reduce fat I may substitute olive oil in place of the butter next time, but otherwise will leave as is.

Creamy Chicken on Linguine

The sauce for this recipe was amazing! I didn't change a thing. I think the next time I make this I will add some kind of vegetables like broccoli and mushrooms or maybe red peppers. The sauce was quite thin so I would probably also make a roux to help thicken things up a bit. Flavor wise this recipe is great!

Restaurant quality. This recipe is awesome made as recipe states. The only recommendation I would have is to make it lighter by using half & half in place of the heavy cream. My kids both loved this too and they are super picky.

Holy Moly are these good! I followed the recipe as written. These taste similar to a peanut butter cup. Just be aware that they are very rich so small portion sizes are a must.

This was very good! I followed the recipe exactly as written. I loved the addition of the garlic. I used jalapenos from my Dad's garden and they were not hot at all. I may use more next time to try and increase the heat. I used this with just chips and on tostadas.

Blueberry Sauce

This was excellent. I made it to over a homemade cheesecake, but I think it would go great over pancakes or crepes as well. The flavors of the cinnamon and orange juice were very noticeable so I may reduce them slightly next time. Even as is the sauce was delicious.

This was good. I followed the recipe exactly except that I did add a bit of vanilla extract. The bake time was off. I ended up baking it for about two hours. It was creamy and good, but not overly sweet.

Special Buttercream Frosting

I didn't care for this. I definitely tasted the shortening and did not like the texture in my mouth. The next time I made a buttercream frosting I opted for actual butter. It was so much better.
