Quick Edamame Salad

I really liked the flavor of this salad. The only thing I did different was to replace black beans with garbanzo beans. Unfortunately, I am the only one who liked - the kids and husband didn't care for it, but they aren't as adventurous as me.

Garlic Chicken with Orzo Noodles

I love this recipe and I like that it is versatile and you can throw in whatever veggies you have on hand. I used fresh tomatoes, carrots and broccoli. I also mixed the Parmesan into the dish - used about double what the recipe called for. The other thing I love about this is it is a quick and easy one-dish meal.

Alfredo Sauce

Clam Chowder - Attempt 1

I loved this! This is the 3rd potato soup recipe from AR that I've tried and this one was by far the best. I followed the recipe as written with the exception of leaving out the celery and replacing it with a dash of celery salt. Will definitely make this again and will try other meat/veggie combos.

Slow Cooker Italian Beef for Sandwiches

Yum! Followed the recipe a stated. I ate mine on a crusty roll with horseradish, banana peppers and mozzarella cheese. This would be a great meal to serve to a large group. I had a ton of leftovers.

Chicken Tikka Masala

Yum! I don't usually rate a recipe when I alter it, but there are over 1700 reviews here so it probably won't matter. I did not use any salt until the sauce was simmering and then i only added it to taste. I replaced the cream with coconut milk and I used boneless/skinless chicken thighs. This tastes so much like what i get at our local Indian restaurant.

Chicken with Quinoa and Veggies

I swapped out the veggies for broccoli and zucchini and omitted the tomatoes, but added in a small amount of tomato sauce. This had a very Mediterranean flavor. I liked it.

Chicken Won Tons

Love the versatility of this. I mixed cream cheese with some leftover rotisserie chicken and chives. I also cranked the oven up to 375 and sprayed all of my won tons with some olive oil and none of mine turned out soggy. They were all perfectly crispy. The mixture tasted similar to a crab cheese won ton you would get a Chinese restaurant except with chicken. yum!

Enchiladas Verdes

I followed the recipe as much as I could, but couldn't locate crema fresca so used sour cream instead. The flavor was great, but my one complaint is that they were soggy. I think I'm used to the more traditional way we get them in restaurants so wasn't expecting that. I kept thinking they needed to go in the oven to crisp them up.

Low-Fat Blueberry Bran Muffins

These were great! We liked them a lot. My only criticism is that we are at high altitude so they didn't puff up like a muffin normally would. I think next time I need to add some extra baking powder.

Buffalo Chicken Dip

I usually try not to rate a recipe if I didn't follow it exactly, but I figured I am one of thousands of reviews for this recipe so why not. I took the advice of others and skipped the cheese and did 1/2 ranch and 1/2 homemade blue cheese dressing. I thought this was a little thick so I added a bit of milk to thin it out. I liked it and preferred this with vegetables over chips.

Parmesan Pork Tenderloin

It's not too often I make a meal that every one in the family enjoys, but this one did it. I mainly followed the recipe, but I did use panko instead of the fine bread crumbs. For the vegetables I did carrots and zucchini both. My only complaint was that it was too salty - I would recommend only 1/2 tsp. 1 tsp was too much. This will definitely go into my rotation.
