Black Bean, Corn, and Tomato Salad with Feta Cheese

I tried this recipe but bought a Yucca not knowing the difference from a jicama but put it in mini food processor and minced it. Was it good, the raves were amazing. Some of my friends said they would use instead of salsa for a dip. Others have issues with green pepper so the next time I will use only red, yellow or orange and it should be just as good. Thanks for the recipe, it is great.

Grilled Bacon Jalapeno Wraps

I have been using Herb & Garlic Cream Cheese mixed with some minced garlic and Tex-Mex shredded cheese . Wrap the jalapeno in bacon and place on a foil lined baking sheet and cook in a 350F oven. Can be made during the cold winter months.

Slow Cooker Baked Beans

This is almost the same as the beans my Mom used to make, slow cooked in the oven, except she used molasses. The recipe used to be on the package of Great Northern white beans but I have not been able to find it anywhere. I love beans with maple flavoring and will definately give this one a try.

Jalapeno Popper Spread

I think sour cream would be a good subsitute for the mayo and use fresh chopped green chilies and jalapeno peppers. I would use grated parmesan chees, asiago or romano. The flavour would still be there and would be great as a dipper or bagel spread.

Jalapeno Popper Wontons

I used to make them like this, but now mix all ingredient except the Jalapeno, cut them in half and take out seeds and membrane then fill them the cheese mixture to which I add garlic then bake them in the over with bacon wrapped around them. Use a foil lined cookie sheet. To die for. Good even warmed in the microwave.

Grammy's Overnight Lasagna

This is great but add some chopped onion and minced garlic toi the ground beef, then add pasta sauce and some fine parmesan cheese while it is cooking. It had much more flavour. Freezes well too for warm up at a later date.

Best Ever Jalapeno Poppers

I use cream cheese, minced garlic & tex mex shredded cheese and wrap the in bacon. Or you could put bacon bits in the cream cheese, no need to rolls in crumbs just put them on a foil lined baking sheet. The are great and less work.

Stuffed Cabbage Rolls

I freeze the entire cabbage and thaw it at room temperature for three days so it is similar to saurekraut, the use raw rice an ground beef. Pour the sauce over an bake at least two hours at 350F, that way the cabbage is more tender.

Jalapeno Poppers I

I found they taste just as good without all the fuss have putting a coating on them, just wrap a strip of bacon around them and put them in the oven. Also the sharp cheddar with some minced garlic and the herb cream cheese make a difference to the flavour.

Sweet Potato Latkes

It should give the number of cups or size of potatoe to use since they vary so much. I would use 2 cups shredded and add pancake flour, eggs, etc. to make them hold together then pan fry. Brown on both sides and put on tray in oven until all are cooked. This insures they are cooked through and not raw.

Ranch, Bacon, and Parmesan Pasta Salad

I prefer to add the dressing to the warm pasta so it takes on the flavour. My favourite is French Dressing. I leave out the bacon and parmesan but add radishes, chopped green onion and peppers for colour. My family like shrimp or tuna. Make sure you add enough black pepper and take it easy with the salt. Mix all together and leave overnight in the fridge for better flavours.
