I am a Mom, a wife and a nurse. I love to cook! I don't do it as much as I used to with a three year old at home. However, I'm starting to get back in to it recently now that he has really started to love to help me in the kitchen and is always so proud of what he makes!
My favorite things to cook
Mostly savory. Recently I have started baking a bit and have found that I do enjoy it a lot more than I used to.

Coleslaw
This is a great slaw. Used 1/8 cup lightly flavored olive oil, subbed 1/8 cup Agave for sugar and used half green and half red cabbage. Very good!

Quinoa, Beet, and Arugula Salad
Very good! We enjoyed this salad. Used Agave, about a tsp. Used regular quinoa as I didn't have red and cut the oil in half. Also, did't use any goat cheese. The flavors went very well together. Will make again. Thanks for the recipe!

Lentil Soup
Loved this soup! I used more garlic, doubled the spices, 28 oz diced tomatoes, 1/2 veggie broth 1/2 water and subbed kale for the spinach and way more than called for. Also, added a parm-regg rind as it was simmering. Sooo, good! I know, alot of changes but I really only used the recipe as a starting point. Thanks so much!
