About this Cook
I grew up in a comfort food house and I dream of having the time to create a comfort food house for my family. My father is an excellent cook and has created some of the most amazing meals. I love to recreate my favorite recipes of his. As a child, I was weak and often home sick. as I got older, the desire to cook and bake took priority over sports and I joined 4-H. My childhood scrapbook is full of purple and blue ribbons. I am recently re-married and have 3 boys. Hopefully, they will gain a desire to learn about flavors and aromas, as well as the importance of family table time.
My favorite things to cook
I love to cook meals with a Mexican theme. Italian meals are fun. I want to learn about Indian food. I love to grill steaks, chicken, pork chops and vegetables. I love to play with sauces. My next plan is to create my own chili seasoning from home-grown ingredients.
My favorite family cooking traditions
Turkey and pecan pie at Thanksgiving. Pumpkin pie at Thanksgiving and Christmas. Hot ham and cheese for days and days after Christmas. My dad's enchiladas on Sundays. Cherry pie on my sister's birthday made from cherries picked from our own tree.
My cooking triumphs
I tend to try and wow the ones I love. The first meal I made for my wife was a chicken breast cooked with lime and serrano peppers, served on a bed of corn tortilla chip strips and spicy ranch sauce. I topped it off with a type of pico with avacado. I will submit the recipe after I recreate it. Keep an eye out for a recipe called "Hook, Line and Sinker Lime Chicken."
My cooking tragedies
The first time I grilled, I used a hibachi on the deck with charcoal. I overestimated the amount of time to leave the pork chops on. For dinner that evening, we had some wonderful soft tacos from the restaurant across the street.

Easy Taco Seasoning Mix
I used this as a replacement for my "lack-of" in my pantry. It serves well as a replacement. I prefer my brand with the chunks. I used dried minced onion instead of powder. I added some spice with 1/2tsp cayenne pepper. Thanks!

Southern Chicken Fried Steak
Okay. This recipe is excellent for method, but vague for flavor. I used peanut oil in a chicken fryer and made up a batch of gravy with the pan scrapings. As for the seasonings, I used equal amounts of ground oregano, ground thyme, ground marjoram, cayenne, paprika, chili powder, white pepper, black pepper and sage (about 1/4tsp each for the 2 cups of flour). Instead of veal, I used minute steaks. Minute steaks required about 4 minutes per side. Enjoy!

Rhubarb Cobbler
I really enjoyed the simplicity of this recipe. I went from picking the rhubarb to eating the cobbler in less than an hour. I felt that it needed a bit of something else to balance it out. The next time, I will try vanilla. If that isn't it, then perhaps ginger.
