Pork Chalupas

My husband went nuts over this dish. So easy to make too. I put in only 1 1/2 T of salt because of the salt comments and added it only after the pork was pulled so the beans would cook properly. Will definitely make again.

Lisa's Grapefruit and Avocado Salad

This is definitely light and refreshing and I will make it again with changes. I ended up serving this with shrimp sauteed in olive oil and old bay seasoning. It had a beautiful presentation. The only thing we were having trouble with was the acidity of the dressing, I even added a teaspoon of agave to it to balance it out, maybe it needed more or a pinch of sugar. We also thought serving it with some type of blackened seasoned fish would go well with this dressing. We will try that next time. Definitely has potential!

Quick and Easy Green Chile Chicken Enchilada Casserole

I made this over the weekend for cinco de mayo. If I could give it another 1/2 star based on changes I made I would rate it a little better. There is nothing quick about the recipe but if I had bought a pre-cooked chicken that would have cut down on the time. Also, when charring the tortillas I had 3 burners going at once to save time. I parboiled the chicken in chicken stock, onion and garlic. After shredding I added garlic powder, salt, cayenne and taco seasoning as it would have been way too bland otherwise. I then added a small can of sliced olives and the sour cream to the chicken. Upon serving I put sour cream, spicy salsa, green onions and cilantro on top. The condiments really completed the dish. My husband and his friend kept going back for more servings so I knew it was good. I'm not much of a casserole girl but as far as casseroles go this is one I will make a couple times a year. Also, use a 9x13" baking dish.

Pretty good and different! I flattened out the chicken breasts with a kitchen mallet prior to seasoning and reduced basalmic vinegar to 1/3 c.

Grecian Pork Tenderloin

My 11 year old daughter says this was the best meal she had in a month! Nice and different flavor for a tenderloin. I seared all the sides for a couple minutes in a dutch oven then added the marinade and cooked in oven for 30 minutes at 350. Let rest for 10 minutes, cut and covered with the remaining marinade from the dutch oven.

Blackened Fish

I tried this with tilapia and ghee (clarified butter) instead of butter (since I am allergic to casein) and it turned out great! My husband who is not a fish lover almost cleaned his plate. Very spicy and flavorful, I will definitely make this again.

Baked Dijon Salmon

This was pretty good, I would give it 3 1/2 stars if I could. I was a little disappointed though as I thought it would be fantastic. I don't think I will make this again, but I can see why some people might really like it.

Weeknight Pork Chops

Juicy! What a quick delicious recipe. I rubbed the pork chops with salt and pepper before browning them. I also doubled the sauce and brushed it on the pork chops during the last few minutes of cooking. Then drizzled more sauce on top prior to serving.

Fish Fillets Italiano

I like this recipe because it is fresh and healthy. It needs salt though! Next time I will season the fillets ahead of time with grey sea salt and pepper to add more flavor.
