Chuck's Favorite Mac and Cheese

I've made this dish about 5 times already for work potlucks. I crush up Ritz Honey Butter crackers and use for the topping instead of bread crumbs. The sweet and salty really accompany the dish well. Thanks Chuck!

Thai Chicken Curry in Coconut Milk

I thought this dish was amazing! I didn't have a red bell pepper, so I used a yellow one. I also used regular coconut milk instead of light. I added carrots and served it over fettucini. It is a keeper for our family. Thanks.

Green Chile Stew with Pork

Our family enjoyed this meal last night. The pork was so tender. My husband, the cook, made a few changes which included 5 green chiles instead of 7; 7oz of green chile salsa instead of 10oz; added corn, black beans, red bell pepper, and 1/2 onion chopped. We served this with a sprinkling of grated cheese and some sour cream. Can wait to try this as the stuffing of enchilades with chile verde sauce.

Slow Cooker Chicken Mole

I made this for Cinco de Mayo work potluck. I doubled the recipe. I didn't have any raisins or sesame seeds, but the dish was amazing. I thought it tasted just like restaurant quality. Will definitely make this again with probably not as many chipotle chiles. It was a bit spicy for my boys.

French Toast Souffle

I wasn't impressed with this recipe. I'm not sure if I did something wrong or what, but the bread on the top got too crusty and burnt tasting and the souffle part underneath was mushy. Don't think this is a winner in my house. Sorry

Slow Cooker Lentil and Ham Soup

This was so good and favorful. We used a mixture of lentils and white beans. Making this in the crock pot make my life so much easier. Get home from work and the house smells so good.

Chicken Stir-Fry

We have done stir-fry in our family many times but this was the first time I actually followed a recipe. The part of coating the chicken in the cornstarch and soy sauce mixture was new to me. It really turned out good. I prefer a little more sauciness so I think next time I will add more liquid. I took this to work the next day and ate the leftovers. We will continue to use this recipe at our house.

White Texas Sheet Cake

I made this for a holiday party last weekend and it was a hit. I followed the recipe exactly except for the nuts. Instead I sprinkled praline pieces on the top of the cake. I will definitely keep making this.

Green Salad with Cranberry Vinaigrette

I took this salad to a Christmas Ornament Exchange party. It was very pretty and tasted great. I used Feta instead of Blue Cheese and bought candy coated walnuts instead of making my own. It was very festive.

Easy Seven Layer Vegetable Salad

This recipe brought back so many memories for me. My mom use to make this for every big family gathering. As a kid, I couldn't stand it but as I grew up it became one of my favorite salads. I substitute brocoli for the cauliflower and add some spinach to the lettuce.

Fragrant Chicken Curry

Best Spanish Rice

This has got to be the easiest spanish rice recipe I have ever made. We really liked it. The only thing that I did different was use butter instead of oil and added 1/2 tsp of cumin and chile powder for a little more spice.

Corned Beef and Cabbage

This was very good and so easy to fix. I added some apple juice to it and put the vegies (except cabbage) on bottom per the other suggestions. I will definitely fix this every St. Patty's day...I never fix Corned Beef and Cabbage any other way now!

Cabbage Fat-Burning Soup

I love this soup! My changes were: I used two cans of chicken broth, and one quart of V8 juice (low sodium) and one quart of spicey hot V8 juice. I didn't use the onion soup mix because my son is allergic to dairy and it has Lactose in it. Also, I only used one bell pepper. It makes a huge pot. We will be eating it for days.
