About this Cook
My name is Mark and my wife and I own a few businesses so we try to share in the cooking since we both work a lot of hours. I love to cook but usually don't have much energy at the end of the day! LOL When I do get to making a complete meal, I must say it usually tastes pretty good. But if something is off, I don't know what to add to give it the flavor that I want. My wife is really good at that but not me. I'm on a mission to work out so I can continue to eat my favorite "feel good" meals which aren't always the most healthy!
My favorite things to cook
My favorite is my crock pot pork roast. So easy and the meat is sooo tender. I'll share the recipe soon. I also have an amazing pickle recipe that makes pickles that are AMAZING! Unfortunately that recipe is top secret.
My cooking triumphs
I once made 2 prime ribs that turned out so good it all got consumed that night! I have no idea how I did it so it was probably a once in a lifetime event.
My cooking tragedies
Nothing comes to mind at the moment.

Cheesy Ham and Hash Brown Casserole
I was looking for cheesy potatoes to take to our family Christmas party and found this recipe. I made it tonight with some changes to suit my tastes. It was wonderful and got raves from my wife! :) I left out the ham, used 1 can cream of potato and 1 can of cream of chicken (I like the flavor it adds). Let's see, I only used 8oz of sour cream and used a total of 3 cups of cheddar cheese and no Parmesan. I want to try the Parmesan next time. Our oven required 1.5 hours to cook through.

Pineapple Grilled Pork Chops
Superb! I just joined today and wanted to find something wonderful to make tonight for my wife and family and these pork chops were the bomb! The only thing is I never pour used marinade over my cooked meat...sounds like trouble to me.
