Baked Potato Pizza

Great pizza though we followed the boxed pizza mix instructions instead of the recipe. We loved it, but the kids didn't find it appetizing. It does taste so much like a fully loaded baked potato!

Parmesan Knots

These were ok, a little oily. I didn't brush on the oil/parmesan mix after baking because the parmesan wouldn't be melted enough. So I rolled out the dough as the recipe suggested, but put the parm mix IN the middle of the dough, rolled it up and made the knot, placed it on the sheet and put another dollop of parm mix on top before baking instead of after. This way the parmesan would melt, the seasonings would meld in the dough more and the outter parmesan would get crispy. Next time I'll use less oil since store bought biscuits are usually oily/buttery enough on their own.

Pork-Potato Meatballs

These were great and flavorful. My husband had a bit of a time cooking them in the pan without breaking them because of the potato, but he didn't care. He said they tasted great either whole or broken. hahaha!

Fluffy Instant Donuts

Used my fry daddy to get the oil hot enough to keep the donuts from absorbing so much oil. I made the recipe as is, but next time, I'll use the 3 egg, 1c flour and 3/4 water suggestion. My oldest liked these with a smathering of Nutella on top. :)

Blueberry Crumble

didn't think 1 can of blueberry pie filling is enough as its spread pretty thin across a 9x13 pan. The "batter" doesn't really get crumbly, especially if you add melted butter. I would try slightly softened butter and cut it into the cake/nut mix to make more of a crumblely topping. Added prespiced pecans I use for baklava (nutmeg, cinnamon, clove).. really helped bring some more flavor to the cake mix.

Lamb Shawarma

A good recipe, needed a bit more garlic, but other than that, it was great. I'll definately marinate it another couple hours longer like the recipe suggests. Great with an arugula salad and rice.

Made this using homemade blueberry pie filling instead of the canned kind. Turned out amazingly well and it was SO delicious with a nice scoop of double vanilla ice cream on top while still warm.. keeper!

Authentic Arawak Bar-B-Q Sauce

Made this sauce to use as a marinade for chicken and it was great. I didn't use the scotch bonnet (just way too hot) but used chipotle instead. It was wonderful grilled. Next time we make this with poblanoes or similar. Its a keeper!

Grilled Corn with Cilantro Lime Butter

Family LOVED the cilantro lime butter for this recipe! Had plenty of butter left over, so I wrapped it in parchment paper, rolled into a "log" and saran wrapped it to freeze. Going to try this butter on steaks and other foods!

May have to try a less zesty italian dressing next time.. it was more tangy than spicy. Also may add avocadoes to replace the bell peppers (didn't use bells since I don't like their flavors). Otherwise pretty good!

Chicken Melt

Decent chicken melt recipe, though "sprinkling red wine" on chicken while its over open flame doesn't sound ok to me.. I did a quick toss with the herbs, wine and a little bit of olive oil with the chicken in a bowl before grilling. It did turn the chicken a grey purple, but that's what happens when you use red wine on white meat. Next time I'll use white wine instead to avoid the weird staining. I'll also use some mayo on the english muffins before hand to kinda give them some moisture and flavor. Decent, I'll make it again.

Grilled Lamb Burgers

Great seasonings though I did tweak the meat and omitted the egg/breadcrumbs. I did half beef and half lamb so I wouldn't have to use the egg/breadcrumbs and make it juicier. Other than that, this is a keeper!

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

Husband & I LOVED this recipe.. only sub'd avocados for the mangoes (I'm the only fan of mangoes in the house), but I served it on the side and I used Colby Jack instead of Monterey Jack (couldn't find it in the cheese aisle .. could store have been sold out?!... Next time we make this we're going to use the soft bread used in gyros to be able to contain all that nummy goodness. The french bread just couldn't keep it all in and we had to wrestle to keep the sandwich together in our hands.
