Coffee Roast

We loved this recipe for all its simplicity, it was flavorful and rocked the next day as sandwiches! I used a really nice premium dark roast coffee, seasoned the chuck roast with salt/pepper prior to searing. I'm going to try this next time in the slow cooker as I'm not usually comfortable leaving the stove on for that long of time (toddler in the house!) and will try this in a dutch oven as well. Keeper!

Momma's Marinara Sauce

A decent recipe for when you want to clear out some space in your pantry and want to spruce up regular jar sauce. I made this in the slow cooker and it turned out pretty good. Husband & kids enjoyed it though I found the finished marinara a bit sweet even though I used a Roast Garlic jar sauce. Ultimately though, for a recipe that still has a 4-5 hour cooking time, I'll stick with my fresh tomato based sauce which also has 6 other vegetables in it (shhh don't tell the kids!)

Grands!® Biscuit Taco Cups

Maybe these should be called "taco bowls".. the husband loved these though we both thought the size of the cups were kinda big (we used the bottom of a cupcake pan to make the cups) The boys found them awkward to eat because of their size, they didn't know if they should use a fork & knife or try to pick them up. In the end, they cut the bowl into pieces, but the overall effect was lost on them. Hubs liked them because it was an "all in one" meal with a side salad of cole slaw.

White Chip Orange Cookies

Jumbo Dark Chocolate Cookies

Flavor was nice, but the dough, after adding everything was very dry and crumbly. It wouldn't stay together so I added a few tablespoons of whole milk to reconstitute. It worked and the kids liked them, but I won't be making them again.

Pastrami Chicken Wings

Everyone loved the wings, though my husband was initially skeptical with the idea of chicken wings tasting like Pastrami. Luckily, he loves pastrami so he was willing to try it and ended up loving the flavors, same as our picky 9yr old boy! Making these again for sure! Only change was adding granulated garlic & onion. :) excellent!

Individual Pumpkin Pies

We loved these, even my uber picky mother, and its going into the fall desserts rotation! I just wish the nilla wafers would've stayed "crispy" like a crust, but I'm working on that right now. :D AND I'll use the foil baking cups next time instead of the standard paper ones.

Premium Pecan Pie

My first pecan pie ever, so, the whole jiggle test just didn't seem logical and invariably I think I overcooked it. My dad loved it more for the extra crispy crust & toasted nuts and so did my brother. He did say it's missing more molassas, so maybe I'll sub in some of it next time and omit the maple syrup. But this is definately being made on Thanksgiving!

Slow Cooker Carrot Cake Steel Cut Oats

Followed the recipe with the exception of adding 1/2 cup raisins and 1/2 cup zante currants instead of 1cup raisins. I initially thought the amount of water (10cupes?) seemed a bit much, esp if you include the applesauce, but since I'd never cooked with steel cut oats, I figured it'll "drink" all the water up and be more like an oatmeal when done, I was wrong. After letting it cook for 6 hours (still looked like brown water in a crockpot) I cooked it for another 2 on low.. still watery and I tasted it this morning (let it cook over night) it was a soupy-watery mess with probably about 3 cups of liquid still left over. I had to dredge out the "oatmeal" from the bottom of the crockpot. All that water didn't get absorbed, or cook down.. its watery oatmeal. Smells great, but its not appealing at all. Was kinda hoping this would be the chance I'd get over my distaste for oatmeal with something yummy. I'll keep searching.

Chicken Crescent Calzones

A simple weeknight meal the husband and oldest son enjoyed. I couldn't find monterey jack cheese, so colby jack was sub'd along with sliced grilled chicken instead of the deli. It was a bit dry in the middle, maybe using a creamier cheese like gruyere would help keep the chicken moist while baking. The mushroom gravy did help eliminate that, but for the boy who doesn't like gravy, it was dry to eat.. so he used ketchup, the kid's condiment of choice. Will make this again, subbing out chicken for ham or other meats & using other cheeses.

Slow Cooker Mediterranean Roast Turkey Breast

We really loved this as an alternative to the usual "roast turkey" in the oven. I couldn't find Greek seasoning at the store so I used a Mediterranean rub I make from scratch instead with a bit of lemon zest in it. Turkey turned out moist, very flavorful and easy to make. Can't beat that for dinner! :) Will make this again, for sure.

Trail Mix White Fudge

Made the recipe as is and the white chocolate with the ginger was just too sweet and overwhelming in ginger flavor. Its just not the kind of thing we'd pack for a hike or take camping, its just too sweet.

Grilled Mediterranean Greek Pizza with Sundried Tomato Chicken Sausage

We enjoyed this recipe as an easy dinner during the week. I used the Garlic Chicken Sausage instead of the Tomato/Basil the recipe called for, then tried tomato/basil feta cheese and also used Indian flat bread in place of the "boboli" type pizza crust. The flavors were perfect and it was so simple to put together.

Easy Weeknight Chicken Pot Pie

I'll give this 4 stars because of the easy prep and concept for a weeknight meal. I found the recipe didn't have enough seasonings so I added more thyme & sage beyond what the poultry seasoning and Progresso sauce had. I do agree the recipe needs more veggies like celery/potoato to add to what the frozen bag of veggies lack and to boost flavor. I made pie crust from scratch since I had the time. Husband liked the dinner for an easy weeknight meal.

Italian Chicken Sausage Stuffed Portabellas

We're not big portabella mushroom fans, but love "stuffed mushrooms" so we used large white mushrooms instead. I made the mistake of buying plain cream cheese instead of the one WITH chives/onions and just added fresh chives with sauteed onions to the cream cheese. Used a food processor and pulsed all the ingredients, including cooked sliced sausages, to a chunky texture. Added a pinch of parmesan cheese to the bottom of the mushroom caps before adding the spoonful of "stuffing", then a pinch of panko & parmesan on top. Baked in the oven for 6 min with the last 2 on broil to crisp/brown the tops. We LOVED them! Will definitely try this recipe with the Roasted Garlic Al Fresco!

Cheese-Stuffed Mini Meat Loaves

This recipe made as is doesn't make 12 muffin sized meatloafs as 16ounces of meat won't fill 12 tins full, that's only 1.2 ounces per "cup".. and since we usually do a meat mixture with pork, beef and veal, we made 3 lbs and was able to have 24 decent sized meatloafs (we froze the leftovers for another night, maybe meatball subs?). I was disappointed with the thinness of the sauce, I was expecting sometning thicker like tomato sauce, but the Progresso sauce was more watery with chunks of roasted tomato. I added additional Italian seasoning to the panko crumbs, garlic powder, a bit more pepper than the recipe asked for and omitted the salt to the meat mix. To the sauce to serve over, I added pepper, a dash of Italian seasoning, garlic powder and onion powder. We used colby jack and mozzarella cheese in the middle. Husband liked it, the kids were "okay" with it (they're not big meatloaf fans it seems, only like ground meat in burger form I guess!).. I thought it turned out okay after adding all the additional "stuff".

Awesome Italian Macaroni and Cheese

In reviewing the ingredients, there's nothing in the recipe to make it "Italian", so I'm kinda scratching my head as to why it was added as part of the description. Made the recipe as written and baked up fine. I was a bit concerned with the finished texture of the Mac/Cheese, it wasn't creamy cheese, but more of a firm flan/custard like sauce after baking. There's not much "cheese" IN the recipe so much as its a topping. My husband enjoyed it and 1 of 2 boys did as well. I just couldn't get around the texture and lack of cheese in the sauce and lack of seasoning. I included Italian seasoning into this recipe, so at least I'd be able to say its Italian Mac & Cheese.
