Boiled Peanuts

All I can say is WOW! I've never had boiled peanuts before but wanted to try them after I watched an episode of Dinner Party Wars where a New Orleans cook prepared them. Fantastic. I followed advise of others and added cayenne, garlic cloves and one smoked habanero pepper to the brine. Let them cool down in the brine and they certainly did take on more flavour as they cooled. Making a huge batch of these for our annual "Furnace Head" cook out this weekend!

Grilled Mushroom Swiss Burgers

If you want to kick this up a notch, and make it taste like restaurant mushroom burger sauce, stir a little dollop of sour cream into your mushroom mixture after you've taken it off the heat. Perfection!

Roasted Red Potato Salad

I have been making this for years, only I toss the potatoes in olive oil and a packet of taco seasoning before roasting. Delicious! Oh, and I always use green onions and real mayo, not the sweeter Miracle Whip.

Beer Batter for Fish

I was out of cornstarch so added a bit more baking soda, no pastry flour, used all purpose. This was impressive! Not greasy, excellent taste. I used it for onion rings and I would have thought I was getting them in a greasy spoon, less the grease.

I thought the texture on this was way off. I hesitated adding the breadcrumbs but decided to stay true to the recipe, and I really regret it. I will not be making this again.

Chicken Curry I

To thicken, instead of cornstarch and water, try mashing some boiled potatoes in coconut milk to make a paste - I used my hand blender, and it worked great! Good recipe, simply add more or less of the seasonings to appeal to your taste.

California Avocado Salsa

Made this recipe excluding the chopped tomato, as I stuffed cocktail tomatoes with the other ingredients - I also added a touch of fresh grated parmesan cheese and crumbled bacon - switch up basil for the corriander, good too.

Beef Noodle Soup

This recipe is all natural, Good for you! If you feel the need to spice it up, try adding 'fresh' herbs, garlic, bay leaf, thyme, oregano - use tenderloin, and make your own noodles if you want gourmet (that's what I did!) but don't say you threw in a can of this or a packet of that, chock full of preservatives and MSG then say it was better.... Just appreciate the fact that it's quick, easy and good for you, and leave it at that.

Sweet and Sour Sauce I

This was absolutely good. I seared chicken breast strips in butter and garlic, and added this sauce to the skillet, simmered in the oven and served over jasmine rice.

This was good. I used raspberry blush vinegar and added sundried tomatoes, a grated granny smith apple, radishes, a little dill flavoured saurkraut, chopped spinach and garlic.

Cream of Mushroom Soup I

This was great. I added basil, sundried tomatoes and a vadallia onion. I also floated a slice of mozzarella cheese garnished with paprika and green onion on top. Broiled to perfection, thankyou.

Slow Cooker Honey Garlic Chicken

This was absolutely fantastic, and I'm not a fan of thighs. I didn't have any pineapple on hand so I simply sliced up a lemon and layered it on top. Very good, thankyou for the recipe.
