Black Beans with Pico de Gallo

I made a variation of this. tomato, onions, fresh garlic, cinlantro and lime juice. then i added drained black beans from a can and stuck it in the fridge. it's a GREAT snack.

Balsamic Vinaigrette

quick and easy and tastes great! i made the following changes after reading the comments below: used traditional balsamic vinegar, added an extra clove of garlic, added a squeeze of honey, and accidentally left out the salt and pepper. next time i will use less olive oil and add the salt and pepper. this was great, thanks for recipe!

Chili Glazed Salmon

Everyone who tried this LOVED it. I used 3/4 cup of Sweet Thai Chili Sauce because i love to mix my sides in the sauce. It came out great and was so quick! For non-seafood lovers, I made the same sauce and put it over chicken. It was great that way too, but i enjoyed the salmon more!

Sweet and Sassy Pork Tenderloin

everyone LOVED the sauce! i actually had to double the sauce because i knew that so many people would like it. My changes: I didn't have horseradish or red pepper flakes so i doubled up on the mustard. I also added in spicy brown mustard to give it some spice. I was told to add sriracha next time, so i think i'll do that! loved it!

Chicken Puffs

these were excellent, but i had to make a few modifications - which is why they received four stars. my changes: i took the advice of others and use chive and onion cream cheese. i doubled up on the onions and garlic. i added mushrooms as well. the recipe doesn't say to cut up the chicken, but you'll need to do this as well. i used half the amount of butter and waited for the chicken mixture to cool before adding the cream cheese and butter. i had to cook my puffs longer - but i used a glass pan just in case they spilled over. i dusted the tops with butter and added garlic powder. YUM! some comments i received from the husband: they could be spicier. I think i'll add in some pepper or cayenne.

Fettuccine with Sweet Pepper-Cayenne Sauce

Amazing! My husband LOVED this recipe and so did I. After making it a few times I finally decided to change it up. NOTE: This recipe is good AS IS. My Changes: marinate the chicken in sweet chili sauce found in the Asian aisles, add onions and mushrooms for substance and variety. Pairs very well a salad or baked cauliflower.

Homestyle Stuffed Peppers

This dish reminded me of the bell peppers my mother used to make for us, only less time. For some reason my mom made this dish sound like it was so time consuming. Well, not with this recipe! My husband loved it and so did i. no changes were made to the recipe.
