Pretzel and Parmesan Crusted Chicken

Reviewed: Apr. 22, 2014
This needs more reviews! :) Like the submitter, I didn't measure the spices, just used a generous amount - used dried basil because that's what I had, and used garlic powder because I have a love/hate relationship with minced garlic: I love it; it hates me. :) Made it simpler by pounding the breasts in a freezer Ziploc, then added the spices in the bag, poured the oil in, and mixed it well. Marinaded all day, flipping the bag a few times. Used 6 breasts so increased the topping, which I didn't need to do - I think the original amount would have covered 6 generously. Baked on a baking sheet covered with aluminum foil at 400 because I did not get them pounded as thin as directed, and ended up baking for about 40 minutes instead of 30 for the same reason. The chicken was amazingly moist; the topping was crispy; and the household says PLEASE put it in rotation!

Curry Stand Chicken Tikka Masala Sauce

Reviewed: Apr. 9, 2014
Ok, yes, it takes longer than just dumping a container of pre-made sauce over your chicken, but holy Ganesha it's yummy! Replaced onion with onion powder because onions are not my friend, same with garlic, left out the cayenne because I am completely a wimp, and used butter because I couldn't find ghee and didn't have 45 minutes to make it. :) Still came out lovely!

Mama's Asian Chicken and Rice (Orange Chicken)

Reviewed: Jan. 23, 2014
Ok, THIS one goes in rotation. :) Doubled the recipe. Substituted cider vinegar because that's what I had, used slightly less brown sugar and slightly less red pepper than the recipe calls for, and didn't have an orange to zest so just was a little more generous with the OJ. Next time I think I'll double the sauce, just to saturate my rice and put on my steamed veggies too. Thank you for this simple and delicious recipe!

Karyn's Cream of Crab Soup

Reviewed: Dec. 24, 2013
Oh my - this is ambrosia! I only used half a pound of actual crab and supplemented with another half-pound or so of faux crab, and I did cut back on the Old Bay to taste as I am a wimp when it comes to "spicy," but other than that I followed the recipe as written and this was delicious!

Alice Chicken

Reviewed: Aug. 15, 2012
My teen daughter said, "This is really good, Mom" -- TWICE! This is unheard of. :) I added a bit of broth, onion powder, seasoned salt, and whole peppercorns to the marinade, mostly because I was running lower on Worcestershire than I realized. Also cheated with pre-cooked bacon slices, just for convenience. Ended up broiling about 8 minutes per side plus three minutes to melt the cheese (thick chicken!). Used Ken's Honey Mustard and let everyone add their own mushrooms to accommodate the non-mushroom-fans. Served with rice pilaf and steamed asparagus. Thank you for this recipe!

Eggs Benedict Breakfast Pizza

Reviewed: Jan. 17, 2012
My picky eater ate seconds and said "Mom, this is glorious!" :) Added some Spike seasoning, dill, and pepper to the eggs, threw some bacon on as well because I had some pre-cooked handy, and per other reviewers suggestions, pre-baked the crust for about 5 minutes. Fabulous addition to my "breakfast for dinner" slot in my rotation!

The Best Ever Chicken Nuggets

Reviewed: Jan. 4, 2012
First time making actual fried nuggets, instead of baked. Did the flour-egg-flour dip like other reviewers recommended, replaced some of the garlic salt with Spike seasoning (I've found it is GREAT for breading), and made "Chick-fil-a Sauce" (about 4 parts Ken's Honey Mustard to 1 part hickory smoke BBQ sauce) to go with them. SO said "If you ever need to take a chicken dish to something, don't take this one -- leave it HERE!" :)

Modified Bok Bok Popovers

Reviewed: Dec. 4, 2011
Easy and tasty! Doubled the recipe, left out the onion, sesame seeds, and parsley, and used the 8 ounce soft cream cheese in a tub, but only used half each of a tub of onion and chive and regular. Also used two 12 ounce cans of chunk chicken. Threw in a little garlic and herb Mrs Dash. Baked for 20 minutes. Household says it can go into rotation. :)

Pastitsio III

Reviewed: Nov. 13, 2011
Fabulous! I no longer have to go to a Greek restaurant for my favorite dish! Only changes were based on what I had on hand, since I made this on a whim -- canned diced tomatoes and cider vinegar instead of red wine. Oh, and added about a half teaspoon of oregano to the meat, and just a bit of nutmeg to the white sauce. I might make more white sauce next time -- not because there's anything wrong with the proportions as-is, but because I really have a "thing" for custards. :) Absolutely fantastic!

Cheesy Brat Stew for the Slow Cooker

Reviewed: Sep. 26, 2011
I used Johnsonville Beer Brats, chicken stock for water, frozen green beans instead of canned, and left out the red pepper. Per other reviewers' recommendations, I also added a can of cheddar cheese soup, and added the shredded cheddar in the last 30 minutes of cooking. Cooked on low for more like 9 hours, while I was at work. My daughter (who is not a bratwurst fan) found it acceptable, and the SO said I could make it three times a week and he'd be happy. :)

Pierogi Supper

Reviewed: Sep. 26, 2011
I have made this as one of my standard "I don't have energy to cook" meals for ages. I never thought of the summer squash and zucchini! A great way to add some nutrition and color. I also make it with sauteed (or microwaved if I'm really lazy!) smoked sausage slices instead of ham, and add Parmesan cheese to taste.

Broiled Tilapia Parmesan

Reviewed: Apr. 12, 2011
AWESOME. Very simple, and VERY tasty. I used salmon instead of tilapia, because it's what I had, and I used finely-crushed celery flakes instead of salt (same reason), but other than that I followed the recipe to the letter and this is the first thing I've done that I thought came out "restaurant quality." THANK YOU for this recipe!!!

Slow Cooker Texas Pulled Pork

Reviewed: Mar. 17, 2011
Excellent recipe - my family asks for this one regularly! The only thing I change is using onion powder, because onions and I don't get along, and cutting down on the brown sugar slightly and using a tablespoon of honey in its place. Oh, and adding a bit of fresh ground pepper. :) Definitely five stars!
