Roasted Red Pepper Cream Sauce

I only cooked enough for 4 servings, but used the amount of red pepper for the original recipe. My husband thought it tasted like a sauce he's had on etouffee at a Cajun style restaurant it was that good.

Aussie Chicken

I left the mushrooms off of my husband & son's piece, and they both loved it. I left the mushrooms on mine and loved it, although, I thought it was a little bit too salty.

Mini Pumpkin Butterscotch Muffins

Even my husband like these and he's not a fan of butterscotch. They were a little sweet to serve as a breakfast food, but were perfect for an afternoon snack.

Green Salad with Cranberry Vinaigrette

This was a really great addition to Thanksgiving Dinner this year. It was a big hit with everyone. The only thing I changed was substituting Feta cheese for the blue cheese. However, if you think you will have any leftover, then it would be best to add the dressing to individual portion sizes, as the lettuce is not very appetizing to look at the next day.

Bread Machine Focaccia

This had a great flavor, but mine turned out hard as a rock. I must have overcooked it, but it never browned on top. Might try again, but not sure I'm up to cleaning the mess out of the bread machine.

This was good, but next time I'm going to use fresh green chiles or possibly jalapeno's instead of canned. The canned ones just didn't add enough to the overall flavor.

Black Bean and Salsa Soup

This made a good base, but I had my son (who is a HS culinary student) play with it and add some spices (salt, pepper, paprika, crushed red pepper, chili powder & onion powder) to make it more flavorful. He suggested adding 1/2 an onion the next time. I will definitely make it again with his suggestions.

Mexican Cornbread II

This was sooo tasty! The only reason I gave it 4 instead of 5 was it seemed a little too moist for cornbread. I will have to try it again and add extra corn meal and see if it lightens up. We served it with a black bean soup and it was soooo good dipped in the soup.
