Pork Tenderloin alla Napoli

I thought this was outstanding. I added more wine after cooking for 30 minutes because my tenderloin was very large and the liquid was almost gone, then cooked an additional 20 minutes until done. My kids devoured it, but picked out the olives. Which is fine--more for me!

Tipsy Chicken

Pssst. I will tell you the secret to this recipe. Add a little olive oil to the spice rub. Then gently pull the skin away from the chicken. Rub the spices UNDER the skin as well as on top. The chicken will be super flavorful and the skin will be nice and crispy. You're welcome ;)

Easy Sour Cream Scalloped Potatoes

What I like about this recipe is that it is super fast and easy. I did add some dried minced onion and some garlic powder. I did not pre-cook the potatoes. Instead I covered them and cooked them about 55 minutes.

Sloppy Joes II

A little too sweet for me, but I did like the addition of the bell peppers--especially because my 4 year old didn't notice she was eating vegetables. Good amount of sauce vs. meat. We made it with ground turkey since we don't eat much beef.

Baked Ziti

I made this as written, only adding Italian seasoning to the meat. It was simple, quick prep, and DELICIOUS. My 1 year old and 4 year old gobbled it up. The leftovers were good too. I think next time I will make double the recipe and freeze one for an easy "throw it in the oven" work-night meal. This one is going in my rotation.

Zesty Rice 'N' Bean Casserole

Okay, but a little bland, not "zesty." I had to add hot sauce on top of mine. Next time I will add more spices, maybe taco seasoning. Also, the mozzarella doesn't have a ton of flavor, so I might use a different cheese. I did use pintos instead of kidney beans, because that is what I had.

One Pot Pinto Beans

Very good. Of course, I used much less salt: 2 tbs. But that was even too much. Next time I will use just 1 tbs. It was also a little spicy for my kids, so I will use less red pepper next time. We just ate the beans straight from the slow cooker sprinkled with a little cheddar. Made a yummy, cheap dinner, and I will freeze the rest of the beans for another night.

Goat Cheese Stuffed Lamb Burgers

These were INCREDIBLE. I did do one thing a little bit different. I mixed the herbs into the meat because I followed other reviewers' advice and froze the cheese in discs and placed them between two thin patties. No leaking cheese.

Grilled Garlic Parmesan Zucchini

I made these zucchini as "boats," scooping out the middle and filling it. I mixed the cheese with the butter, garlic, and parsley and added a little bit of mayo to make a paste then filled the boats before grilling. Very good.

Caesar Salad Supreme

I made this dressing in my food processor. It was a little thick, so I thinned it out with a little bit of dry white wine, and it tasted fab. I used extra anchovies because I like them, and extra lemon juice and dijon because I like the tang. Very good.

Stuffed Pasta Shells

Great, with some changes. The filling tasted a bit bland as is, so I followed other reviewers' suggestions and added chopped garlic, italian seasoning, salt, pepper, and parmesan to it. Then sprinkled the whole thing with more mozzarella and shredded parmesan. Made a second batch to freeze.

Wilted Spinach

This is very good and very easy. But there is way too much dressing for the amount of spinach. The second time I made it, I doubled the spinach and halved the dressing and sprinkled with feta. YUM YUM YUM.

Tomato Gorgonzola Soup

Very good. I did run it through the blender since my husband doesn't like "chunky" soup, but everything else is according to the recipe. The color was a little odd, but it tasted so good that it didn't matter. I think it probably would have been even better with fresh basil rather than dried. I really liked the flavor (and vitamin A) that the bell pepper gave the soup. I think it would have also been very good with a sourdough baguette accompaniment.
