About this Cook
This may sound funny but I hold it to be true: for those of you who have seen the movie 'Like water for Chocolate', you will know what I mean. I believe that the cook's feelings are infused into the food. Anything cooked with love will be wholesome and filling for those who eat it. I also hold true that the way to anyone's heart is through their stomach!
My favorite things to cook
I have many favorite dishes but some that have received the best reviews are: 1) Orange Marmalade Dijon salmon with garlic mashed potatoes and a wilted spinach salad with a Dijon garlic vinaigrette. 2) Pork Au Poivre with a spiced mashed potato side and a red wine sauce made with my favorite Pinot Noir. 3) Fillet Mignon with stuffed baked potatoes and fresh chived green beans. 4) Quick pan fried salmon with a ranch dill dressing served with Cuban black beans. Truth is, anything I serve my wife that she likes becomes a standard, if she doesn't like it she never sees it again. She is my guinea pig, so to say, but she likes it.
My favorite family cooking traditions
I have no family favorites because high cholesterol has plagued my family. I have chosen the road 'less traveled' with healthier fare that is both fresh and delicious. More fish, vegetables, lean meats...

Tilapia Scaloppine
I cooked this recipe for my wife this evening and she LOVED it. I think the only thing I would do differently is add more mushrooms. It goes great with my spinach garlic vinaigrette side dish. One hint that I can recommend - whatever white wine you put into the dish serve with dinner, it makes a great bridge!

Portuguese Sweet Bread IV
This recipe was alright but I'm still looking for a recipe that has a true sweetbread flavor. This recipe seems like it doesn't have enough sugar in it...? It has no vanilla or lemon flavoring and doesn't result in a fluffy, full loaf as I expected it would. Perhaps it could be tweaked to become what I expected but I would like to come by a true, old world sweetbread recipe.
