Absolutely Fabulous Greek/House Dressing

Reviewed: May 9, 2014
Would give 5 stars if I didn't change it a little, First I scale it down to 12 servings and use about 1/2 cup lemon juice instead of vinegar, use it to your taste, we love lemons and put it on everything in our house. I also add a tsp. of sugar. Again add slowly to your taste if your going to try it. Leave out the oregano. Then of course you have to get some good crusty bread to dip in any left over dressing in your bowl!

Grandma's Chicken Chardon

Reviewed: Mar. 5, 2014
This is my go to chicken recipe. I've done it with bone in chops too. I use seasoned bread crumbs, mini portobellos and usually add extra lemon.

Blue Cheese Burgers

Reviewed: Feb. 10, 2014
My Mom made these every summer as far as I know her recipe just contains an egg to make a difference. I made as is and was it the best burger I ever had, no, but still darn good and got Mom's approval so there you go, a keeper. Thanks!

Brussels Sprouts in a Sherry Bacon Cream Sauce

Reviewed: Jan. 13, 2014
Have to admit, I was worried. The roasting sprouts put out an awful odor, so much so, I shut the oven off and good thing because they were done in half the time. I just kept thinking next time I am boiling them, BUT, in the end it was worth it, they made the dish beautiful being browned and the cream sauce delicious. I grew a love for sherry. I felt it came out a very fancy dish and will make again on the holidays. A keeper!

Wedge Salad with Elegant Blue Cheese Dressing

Reviewed: Jan. 12, 2014
I cut recipe in half for 4 servings and had to add a little more oil and buttermilk to get the consistency I wanted. Although we love garlic, I didn't want even the smallest pieces of garlic in the texture so I added 1/4 tsp garlic powder instead. All in all, loved it and will make again. Better than any store bought and as good as a restaurants. I don't think if folks say it has too much vinegar they should criticize so much, next time just use less to your liking. I found the ratio very good. I really haven't made a recipe yet I haven't tweaked in one way or another but they are always good start! Thanks for this one!

Slow Cooker Teriyaki Pork Tenderloin

Reviewed: Jan. 10, 2014
Would give 5 stars but changed a couple things using what was on hand. First I used boneless sirloin chops (4), 1 chopped canned chipotle pepper with a little of the sauce, 2 cups broth to cover chops and 1 tsp. cornstarch to thicken sauce as it cooked. Delicious!

Spicy Garlic Lime Chicken

Reviewed: Jan. 6, 2014
This was so good but I did do just a few things different. Instead of butter and oil I cooked them in bacon grease because I had just fried a couple pieces for a side dish I was also making. Then I added about a 1/4 teaspoon brown sugar to the spice mixture too and I poured double the lime juice in the pan at the end of cooking time and just flipped chicken once in it. We were practically licking the pan for the sauce. So good will be my go to spices for everything from now on, cant wait to try it on shrimp!

Cranberry Chipotle Meatballs

Reviewed: Nov. 25, 2013
Love spicy sweet, great hit at party. For those saying it is way to spicy, the recipe calls for one chopped chipotle pepper, not the whole can! I used one plus added a little extra sauce. Perfect.

Greek Lemon Chicken Soup

Reviewed: Oct. 15, 2013
After reading reviews I also, cut back to 6 yolks and on the soup base and used the juices from my baked chicken instead, added more rice, we like it more hearty and unlike others, I added more pepper and lemon, my big fat Greek family loves lemon! Not my Mother's Avgolemono but it passed!

Garlic Chicken Fried Chicken

Reviewed: Oct. 12, 2013
Like the breading, but ended up baking mine, no time to stand over the stove and healthier. I think it probably came out juicer and stayed together better than what I have been reading about frying it leaves it dry and the crust falling apart.

BBQ Salmon over Mixed Greens

Reviewed: Oct. 8, 2013
The combo of spices is now my go to rub for everything. I did use a little more vinegar and only 1 C. of the tomato juice, is the dressing good for just a salad, not really, but great when you top the fish with it and it's all put together. I topped it all with some sliced red onion and feta too. Yum! A keeper, Thanks!

Tex-Mex Enchiladas

Reviewed: Oct. 7, 2013
These were tasty, but I found it to be a big mess, so I ended up making an enchilada casserole by layering everything instead, much easier. I didn't find the need to heat the chili first either and I just added the onions to the chili mixture to save a step later. Trying to heat the tortillas first was just too hot and greasy to work with. Sorry.
