Sauteed Zucchini

I make this frequently, more so in the summertime when the zucchini is overflowing. I also use yellow squash and halved grape tomatoes. Chicken stock if I've got it.

Creme de Menthe Cake II

Moist cake, a big hit at company potluck. I made it in a 10x13 pan and frosted it with Cool Whip and green creme de menthe mixture. Added some chocolate shavings to the top.

Crustless Cranberry Pie

Loved this recipe when made by someone else. When I made it, I doubled the recipe and used a 10x13 pan. Per some reviews, I added the zest of one orange and 2 tbl of orange juice, used vanilla extract with just a touch of almond extract, and pecans. Also made a very thin icing drizzle using conf. sugar, vanilla extract and orange juice. This is not really a pie, but more like a bar or coffeecake. Excellent a day or two later.

Virgil's "Top Secret" Pork Chop Marinade

Well, I'm glad it's no longer a secret. So simple, great flavor, and beautiful color to the chops when done. Will try this again on the grill and perhaps some chicken. Do marinate overnight or several hours. I added some fresh garlic. I did not taste much of the hot sauce, but then my drops may not have been big enough.

Blueberry Lemon Yogurt Muffins

Could not find the ultra grain flour, so used all-purpose. Based on other reviews of not sweet enough, not enough lemon flavor, and somewhat dry, I amped it up. 2 tbl of lemon zest and lemon juice. Used lemon flavored yogurt, but didn't have quite enough , so I used about 1/2 cup applesauce. This was perhaps a bit much because the muffins didn't look pretty, but the flavor was great, although almost too moist. I also added 1/4 cup granulated sugar. My muffins probably looked darker than they should have since I only had dark brown sugar.

Hamburger and Macaroni Hot Dish

Changed up this recipe and subbed Johnsonville sausage for the hamburger, canned diced tomatoes for the tomato soup, and 1/2 cup shredded cheese for the sliced cheese.

This was very good over grilled steaks, but did need seasoning/salt. I omitted the green pepper. I would you red bell pepper next time to give it a pop of color.

Sweet and Spicy Lime Chicken

This was a hit, but there was no heat. I did seed the pepper, so perhaps next time add another or leave seeds on. Based on our personal preference, I reduced the honey in half. Also thickened the sauce with a bit of cornstarch.

Nice method I've used before. Adding a bit of garlic might make the flavored pop. I squeezed the juice from the baked lemon and orange slices to boost the flavor.

Beefy Bloody Caesar

I get the idea of wanting the beef flavor, but the bouillon powder does not dissolve in cold liquid, so you have unattractive powder floating on top. Either heat a bit of water and dissolve the powder or use some beef broth.

Easy peasy...and cheesy! Quick dish for a crowd, also good for just two if you've got a lot going on the stovetop. Great dish to add extras (ham, onion, mushrooms, etc.)

Bacon, Brussels Sprouts, and Mushroom Linguine

Simple dish, great for weeknight supper. I added 3 cloves of garlic and 2 shallots to the bacon mixture for an added boost of flavor.

Nothing about this dish worked. The ketchup-mustard blend didn't work well with chocolate covered rice krispies. Just the wrong flavor combinations.

Candied Baked Beans

Other than adding sugar products, there was nothing else to make this a great baked bean dish. I made recipe as written and followed the directions. The marshmallows probably should have been added at the end and broiled for a bit. As written, they completely melted into a puddle on top of the beans.
