Peachy Moist Muffins

These were good. The texture was great, but I thought the muffin batter tasted a little bland with just vanilla extract: maybe the pecans/peaches/yogurt drowned it out? In the future I'd probably add some baking spices and/or more vanilla to play off the peaches and pecans. I love baking cakes/cobblers with peaches but thought the pieces in these muffins got a little "mushy". Thanks for sharing.

One Bowl Chocolate Cake III

I loved this recipe. I think the 3/4 cup cocoa powder is the perfect amount of chocolate flavor, and the runny batter worked wonderful for the cupcakes I made with this. Not overly moist and dense as some of the recipes using a mix and box of pudding: it's the regular smooth light texture of perfect cake. Will make again and again, thanks so much for sharing :)

Banana Coconut Loaf

I made exactly as directed and thought the texture was perfect. All the flavors combine but don't get lost in the bread: the banana and coconut and cherry are all distinct but work well together. I don't always have milk in the house and I appreciated this didn't call for any. Thanks very much for sharing.

Lime-Tarragon Grilled Chicken

This was a pleasant marinade but nothing about it really knocked anyones socks off. I think the lime might be a little too intense for the tarragon, or maybe fresh is needed to really flavor the marinade. We enjoyed trying this recipe, thank you for sharing.

Pineapple Chicken Tenders

I thought this was great chicken. I usually don't like sweeter foods but the chicken thighs had great sweet flavor without being coated in a sticky sauce. Used as a marinade and grilled, made the recipe exactly as written. Thanks very much for sharing.

Stuffed Strawberries

Oh WOW these are awesome. I blended the cream cheese with the triple sec and started adding sugar: I tried it after ~1/2 cup and it was heavenly, but feeling decadent I added a closer to 3/4 cup and a shameful amount of mini chocolate chips. Each bite tasted like a chocolate chip cheesecake topped with strawberries, DELICIOUS, thank you so much for sharing!

Mijo's Slow Cooker Shredded Beef

Mmmm, we really enjoyed this. It's a unique recipe because it's spicy and flavorful but without the usual flavor of Mexican beef. I was out of liquid smoke and had to make without and it was still delicious. I also didn't have any fresh produce so left out all the veggies, if I were to add them in the future I'd probably chop and add with 1-2 hours left on the cooking time, just to preserve their texture. The large ingredient list makes for a very complex and satisfying flavor, will make again with few if any changes, thank you for sharing.

Creamy Macaroni and Cheese

Wow! So delicious, and the simplest scratch mac and cheese I've tried! I love how canned milk is used (we don't always have milk in the house) and only one burner/pot is taken up on the stove. I also loved the Parmesan cheese, I didn't think I'd taste the difference but it really rounds out the sharp cheddar. Mine wasn't grainy at all with sharp cheddar as written but I made sure to melt the butter/whisk in the flour on low heat so as not to scald the roux. Once I added the broth/milk I cranked it up to medium and had a bubbly sauce in 5 minutes or so. The only changes I made were to sub garlic powder, ground mustard and a tiny bit of cayenne for the Dijon because I hate jarred mustard. Will make this my standard mac for the flavor and super convenience of the recipe, thank you so much for sharing :)

Colorado Bulldog

I made this tonight looking to try something new, and I enjoyed it enough. Lighter than a white Russian and pleasantly fizzy. Made mine with diet Coke, which Wikipedia tells me is a Colorado Greyhound - either way, it's a little heavy on the cola. If I were to make again I'd just use a splash of cola. Thanks for sharing.

Slow Cook Thai Chicken

This was really good, as a fan of peanut sauces it was right up my alley. I made with the full 2/3 cup peanut butter and think it could be good with less, but we really enjoyed it as written. I didn't add red pepper or onion as that long in the slow cooker would mush them up, I just used lots of pepper flakes, cayenne, and onion powder. As written it wasn't very spicy. I also used chicken thighs because I've had breasts dry out in my slow cooker, and threw in a bag of frozen stir fry veggies at the end to make up for the pepper/onion I left out. I made the recipe my own but as written this is a filling and flavorful meal, thanks very much for sharing.

Cheesecake Brownies

No problems here, I used the Best Brownies recipe off of this site instead of a box. That recipe makes enough for an 8X8 pan and this amount of cheesecake gave a nice generous proportion of chocolate to cheese, I would probably double the recipe if I was making a full 9X13 pan. Awesome Baked Sea Scallops

Scallops are one of my favorite treats in restaurants, and I enjoyed trying this recipe. I will make again, with a couple of tweaks. The flavor was good, but I think I'm missing the zing of white wine in the sauce. I am not a big wine drinker or cook with it that often, but following the seasonings as directed I thought it was pleasant but unremarkable. 16 was slightly over a pound for me, and I thought there was wayyy too much butter for that amount. I tossed the butter with the scallops then actually drained some off and used that ~2.5 tbsp with ~1.5 tbsp oil for the crumb topping. And there was a lot of topping, I didn't use quite the whole amount but had a thick blanket, but as mentioned it does mix with the sauce and get crispy and good. For our tastes, I would have preferred a moist juicy layer of scallops topped with a few dollops of buttery breadcrumbs. I will use this recipe as a solid base in the future for my dream scallop dish, but as written it's very yummy too. Thanks for sharing.

Seven Spiced Shark Steaks

I added half of all the spices to make a more liquid marinade, and it was still strongly flavored. I will make it again but I think if you add all of the spice quantities it would be overpowering. We were in a rush to grill before it rained so I only marinated probably ten minutes on the counter and we still loved the results. I had never cooked shark before and appreciated the cooking instructions, we got great results. These few pantry ingredients give a very complex and pleasing flavor to the marinade and I look forward to using again, thanks very much for sharing.

Cheese Sauce Over Cauliflower

I didn't follow the head-on-a-platter method, as I was just looking for a quick sauce to jazz up some leftover broccoli for dinner. I did follow the recipe for the sauce, and thought the actual instructions were a little vague. I am no expert but through trials have gotten reliable at making a roux, and I think the specific heat (low, low, low) is very important when combining the butter and flour/thyme. After adding the milk I can crank it up, but blending the two even at medium-low scalds everything (crumbles of flour as opposed to a creamy-smooth consistancy) and you'll get a much chunkier, less cohesive sauce. For my tastes I added more milk, I envisioned a sauce that would really coat the nooks and crannies of the vegetables and as written this is much thicker. Thanks very much for sharing.
