Hearty Chicken Strata

This is definitely a "keeper"... I used egg-beaters in place of real eggs, and I didn't have fresh carrots, so I used a package of frozen carrots and broccoli. I also added a couple of dashed of cayenne for a little zip. Awesome dish for left-over chicken! Thanks for sharing.

Tomato Cakes

I was staying at a girlfriend's house dog-sitting. She is a vegetarian and had a fridge full of organic tomatoes so I decided to try this recipe. I am not a vegetarian, but this was terrific! I added a little basil and garlic and served the cake on a spinch wrap with some cheddar cheese and sauteed spinach -- AWESOME!!!

Downeast Maine Pumpkin Bread

This is still my favorite pumpkin bread recipe! The only things I do differently are to cut the oil to 1/2 C. and the flour to 3 C., use 1C. White Sugar and 1 C. Brown Sugar... and add extra Cinnamon and Ginger... and 3/4 C. raisins. Fabulous!

Brunch Strata

Fixed this for a brunch today and it got rave reviews from everyone.I fixed it exactly as called for except I cut the recipe in half as there were only 4 of us for brunch. I also used red and yellow peppers for color. This is definitely a "keeper". Thanks so much for sharing!

Prawn Nasi Goreng

I tried this receipe because I needed a fast and easy dinner the other night and I had the shrimp on hand. I substituted bell pepper, mushrooms and snow peas because those were the veggies I had. It was terrific! My husband, who is a very fussy man, asked for seconds. This is a keeper!

Butter Roast Chicken

This has become our favorite roast chicken Sunday dinner. I use a whole roaster chicken, make half-again as much sauce, and baste the chicken every 20 minutes while roasting. It stays very moist! Once the chicken is done, I use the pan sauce to thicken for gravy... YUMMY!
