About this Cook
Mom, cooking between homework and music lessons during the week and leisurely on weekends. I could earn medals for my incredible weekly menu planning... If only my intentions transferred to everyday practice. My downfall is cleaning the kitchen. I hate it. And so making big kitchen messes influences what I end up cooking. So if every meal could be a one-dish, 30 minute, healthy carb meal, I'd be golden.
My favorite things to cook
Lemon chicken, pasta fagiole soup, pot roast, stuffed grape leaves
My favorite family cooking traditions
Halushki, pierogies, stuffed cabbage, poppyseed bread, nut roll... All remind me of when i was little but halushki is the only one of those I've mastered.
My cooking triumphs
Stuffed grape leaves. I love them and now i can make them the way we love them with lots of lemon.
My cooking tragedies
Steak, steak and more steak. I am always afraid I'm going to undercook and I end up overcooking. My meat thermometer is the best kitchen tool i own.

Garlic Butter Sauce I
Simple, easy, delicious. Anything with this much butter is going to be high in calories though so just be aware when spooning it onto your pasta, seafood, or chicken.

Spinach Chicken Parmesan
Not a keeper. I didn't mind the taste so much but I would suggest not using packaged parmesan as it seemed to just get hard and not meld into the spinach enough on the top which gave it a weird texture. There just wasn't enough flavor for me so perhaps I'll make some adjustments and come back and re-review.

Penne Pasta with Cannellini Beans and Escarole
Not a big hit for the whole family but I enjoyed it. I used bowtie pasta since that's what I had on hand. It needed a little salt for my taste and was pretty good on the first day. Leftovers weren't as good but certainly fine for lunch at work.
