Pork Chalupas

I couldn't find pork shoulder roast, so I used ribs and it worked wonderfully, just had to pick out the bones. I soaked my beans overnight and didn't bother with mixing the beans, peppers and spices (btw, I only added ONE TEASPOON of salt and that was plenty) in a separate bowl...it's a total waste of a bowl! I mixed it in the slow cooker, added the ribs, and covered with a mix of water and chicken broth. The mixture was tender and tasty, with just the right amount of kick. I served them with lettuce, tomato, radishes, cheddar cheese and flour tortillas, passing salsa on the side. It made enough for an army...plenty to freeze for several more meals. Very nice recipe!

Grandma's Chicken Chardon

I found this recipe to be exceptionally good and easy, which is always a plus in my book. I love to cook, but I'd prefer not to be in the kitchen all night to make a good weeknight meal. I cut the serving size down to two breasts and I butterflied those, so they cooked much quicker than the 45 minutes recommended in the recipe. Other than that, I stayed true to the recipe. I bet you could cut the butter a bit and still have great taste. Will definitely be making this again.

Graduation Cupcakes

Be careful when you make these...the picture shows chocolate cupcakes, right side up, but the recipe calls for white cake mix and upside down cupcakes. Very confusing. :-(

Vegetarian Chickpea Sandwich Filling

Delicious!!! I used low-fat mayo and green onion rather than regular onion. I also added more dill because I love it. It's a little high in carbs (I'm diabetic), but the fiber helps make up for that. Just ate it with some crackers and it was a super-quick and tasty lunch...definitely a keeper!

Mini Ham And Cheese Rolls

Excellent idea and very versatile! Can't wait to have them again...the poppy seeds really add a neat crunch *and* flavor for me. I, like many, used Hawaiian sweet rolls.

Super-Delicious Zuppa Toscana

Delicious and simple to make. I've never eaten at Olive Garden, so I can't speak to it tasting like theirs, but it's very, very good. Will definitely add this to my soup rotation.

Soft Gingersnaps

These were delicious, easy (very!) and made a ton, which was great for Christmas gifting. I dipped the tops in silver, gold, red, and green colored sugar before baking. Bonus? The house smelled wonderful as they baked!

Secret Recipe Sausage Balls

We love these! The French-fried onions give them an extra flavor not found in most sausage balls...don't overcook these...the sausage WILL cook through in a short amount of time and the final product will be tender and tasty! Even my daughter, who dislikes ground meat of any kind, will eat these. They are traditional for our Christmas Eve snack supper and reheated Christmas morning.

Simple and cute as can be! I made mini raspberry cheesecakes for my husband's 50th birthday and topped them with these...they looked great and complemented the cupcakes perfectly. Thanks for the great idea!

Turkey Pot Pie I

This really was the perfect way to use up leftover turkey...I used a pre-made crust and used chicken stock intend of bouillon and water, everything else was done by the recipe. This was first time to make a pot pie and it definitely won't be the last. We all really liked it!

Chicken Noodle Casserole I

A little bland, but that can be easily doctored to make it more flavorful. I refuse to poach chicken...I don't care for it, so I cooked the chicken in foil in the oven, seasoned with lemon slices, lemon pepper, dill and garlic. I used reduced fat soups and fat free sour cream and omitted the butter, just adding crushed crackers on top. I also used no yolks egg noodles. This is for my mother-in-law, who is undergoing chemo, so it will be easy for her to heat up and not too spicy for her upset stomach. I think it's exactly right.

CopyCat Starbucks Classic Coffee Cake

I made this the simple way and didn't do the topping running through the cake, just on top. I didn't double it, either. This is very good...very moist and tender. I don't eat the coffee cake atStarbucks because I'm a type II diabetic, but my daughter said it's better...not as dry. It only took 38 minutes in my oven, so be sure to check occasionally...50 minutes would have ruined this beauty for me!

Pumpkin Ginger Cupcakes

100% perfection. I followed the recipe to the letter...there's not a thing that needs to be changed. The zip and texture of the crystalized ginger makes this recipe for me. I frosted them with cinnamon cream cheese frosting and sprinkled on a bit of cinnamon and sugar to finish. Absolutely wonderful...I make a LOT of cupcakes and this is going into my favorites folder!

Italian Spaghetti Sauce with Meatballs

This was the first time I'd ever made meatballs and despite reading so many differing opinions on cooking them, I decided to make them in the sauce without cooking first, so I chose this recipe. Simple, delicious...we loved them. There was no "extra" grease in my sauce, which I'd read often happens and I even added Italian sausage to the beef! I doubled the recipe and sent half to my in-laws and froze half our our remaining half. There's plenty! Will definitely make again.
