Shrimp Cakes

I read lots of reviews and tried to follow the best instructions for getting them to bind, but to no avail. I made them without an egg, thinking that if I baked them at a high temp, they would hold together. Should have gone ahead and added the egg, I suppose. They looked great when I took them out of the oven, but as soon as I tried to move one, they fell apart. I tried cooking them a bit longer, but was worried about the shrimp overcooking...it was definitely on the borderline...and yet, they still fell apart. Trying to salvage my meal, I decided to just eat them anyway, but the crackers and other ingredients just tasted mushy and weird and the shrimp did not shine. Sorry, but there is just too much wrong with this dish to make it worth trying again.

Slider-Style Mini Burgers

Very good...I only made six because I was using up 1/2 a package of Hawaiian sweet rolls. I made exactly as written...the soup mix made them a little salty for me. I will probably just sub in minced onion and perhaps a touch of worchestershire sauce next time. I've never had a White Castle burger, so I don't know if these taste like them, but they were overall a very quick, simple meal for us, served with cole slaw and fruit.

Strawberry Coffee Cake

Yum! Made this a day earlier than I needed it because of another obligation. We warmed it slightly in the microwave to eat and it was wonderful! The strawberries add moistness, which I often find lacking coffee cake. It did take more than 45 minutes to bake, which makes me think I could have used about half the butter. I'm going to cut it back next time to see if that helps. Finally, I added about 3/4 teaspoon of cinnamon to the flour mixture...we loved the hint of it throughout the cake. This is only an occasional treat for me, but it's definitely a keeper!

Parmesan Zucchini Spears

I love, love zucchini and this is one of the best preps I've found. I cooked it on a bit higher heat to get a really brown crust, but still have the crisp veggie. Freshly grated Parm adds the final little kick. Perfectly wonderful way to serve an old favorite.

Cheesy Green Chile Cheese Burgers

These were good...I cooked them inside as the directions stated, but next time I'll grill them. There was also WAY too much topping for four burgers...there's no way all of mine would fit on four patties. The taste was great, but I think next time I'll also add a spicer pepper...the green chilies are awfully mild. Thanks for sharing your recipe!

Mexican Zucchini Cheese Soup

Yum!! This is one of those simple soups that is easily adaptable to changes/enhancements. I used Rotel instead of stewed tomatoes and spicy Velveeta. I don't buy canned vegetables, but I had a leftover ear of corn, so I cut that off the cob and used it. The heat was just perfect to me!

Monterey Chicken with Potatoes

I liked this a lot...in fact, I changed my supper plans for tonight when I saw the recipe on the Buzz. I made it *almost* exactly, except I used fingerling potatoes and cooked them with a mix of bueer and olive oil at 425, then dropped the temp to 375 when added the chicken and finished cooking. I also salted everything when I added the lime and butter (cut drastically). My chicken was butterflied, so it only took about 15 minutes to cook before I added the salsa/cheese/cilantro mixture. I'll definitely make this again and I'm using the leftover potatoes (chicken is all gone) with eggs to make breakfast burritos. Thanks for a recipe that really sings!

Grilled Onion Blossom

LOVE this! It was quick and easy and totally sweet and delicious. (in fact, it was *super* quick...it was done in about 30 minutes on my grill, not 45, so check yours before the time is up!) I made it exactly as the recipe stated, but I like that it could be easily customized with different herbs or spices. I took a suggestion from another reviewer and cut my onion in a soup ladle to keep from slicing through the whole thing...it worked perfectly! I'm looking forward to doing this one again....thanks for a great recipe.

Refried Beans Without the Refry

I halved the amount of beans and water, but didn't change anything else. They weren't spicy at all and I think I'll increase the spices/seasonings next time. It also took *very* little of the cooking water to get them very creamy. Good stuff and I've got enough to eat a lot and freeze that much more.

Very tasty sauce for chicken tacos. I used chicken I'd cooked the day before and just heated it up in the sauce/marinade. Next time, I'll double it, just to get more flavor.

King's Seasoned Salt

I love this! I am out of thyme...have lots of fresh, but no dried, but even without it, it's great. The smoked paprika is the key, I think. Next time I shop, I'll pick up some dried thyme and add it to the mix.

Jim's Cheddar Onion Soda Bread

The flavor is great, but user error prevented this from being superb for us. As an inexperienced bread maker, I misread the ingredients. I saw "bread flour" and thought, "Oh, I've got that." I actually had CAKE flour...the only other flour I had was white whole wheat flour, so I used that. After 30 minutes, it was still raw in the middle, so I cooked it about 10 more minutes and we ate the outsides of it with supper. I think they would have cooked better as biscuits and I'll try that next time, along with the correct flour.

Balsamic Green Beans

The first words out of my husband's mouth when he tasted these were, "These have a great flavor! Not like regular green beans." he generally doesn't like them at all, but I was craving some, so I tried these. They were great...I had some leftover bacon from another meal, so I just added that after I sautéed the onion and garlic, then added the beans and balsamic. I cut down the balsamic to about 1/3 cup and it didn't take nearly as long as the times indicated to get them perfectly good. Very, very good!

Mexican Tinga

Yummy! I'm a wimp and couldn't handle a whole can of chiptole in adobo, so I only used about half. This is tasty stuff...I'll definitely make it again. *EDIT: I've made this over and over and over now...it's one of my favorite AR recipes ever...love the tingle of chiptole! My favorite way to eat this is in a flour tortilla with some sour cream, but I'm sure the tostada way is great too. I've read some reviews that say it's not authentic, but even if it's not, I don't give a rip...it TASTES great!
