Chicken and Asparagus Fettuccine

I'm reviewing the sauce only because I changed the pasta (to penne) and the protein (to shrimp sauteed with 2 cloves of garlic). I also roasted my asparagus in the oven because boiled asparagus is just not right in my opinion. The sauce came together quickly and easily and with the changes I made, this is a great dish.

Lap Salad

Used this to use up a bunch of cabbage from my csa. Took it to a potluck...I wasn't that crazy about it, but it got eaten, so someone liked it. I added a couple of carrots to the cabbage.

Shrimp Quesadillas

These are very, very good! I don't like bell pepper, so I used my usual replacement in fajitas, poblano pepper. I also grated my own cheese...a blend of sharp cheddar and Jack. Did everything else as written and we LOVED them! Definitely sprinkle with fresh cilantro before you fold over the tortilla...that's mentioned in the description, but not the ingredients. Served with black beans, sour cream and salsa and it's a wonderful meal. Thanks for sharing your recipe.

Sweeter Muffins

Made these for Grandpa's birthday. Grandpa is our cat. Yes, you read that right...I made muffins for the cat's birthday. She didn't get any, but my husband was happy to celebrate for her. Unfortunately, these simple muffins were not that tasty...just ok. I probably won't try them again.

Garden-Fresh Spaghetti

So good! I've made homemade spaghetti sauce for years and decided to try this one because I wanted to add some of the veggies from my CSA basket. This was better than any sauce I've made over the last 20 years! My only changes were to halve the recipe and to use chicken broth instead of beef broth. I'll try the beef broth next time...it may be a while, though, that half recipe left us a LOT to freeze!

Sausage Crescent Rolls

Yum, yum, yum! Before I made this, I roasted six seeded jalapeños and laid them out on one package of the crescent rolls before I spread them with the sausage and cream cheese. I only made 1/2 a recipe, but I'll be making this again and again. I'm going to reheat some each morning for my breakfast. Reminds me of my favorite stuffed jalapeño recipe. Great idea!

Grilled Chicken Wings with Sweet Red Chili and Peach Glaze

Rating the glaze only...I used bone-in breasts and roasted these, so I can't speak to the wings. The sauce was about as simple as you can get, but I thought it was too sweet and not spicy enough, so I added some shrircha to spice it up. There is another Asian-inspired glaze recipe here at AR that I like more, but for ease, you can't beat this one.

Brilliant Sauteed Broccoli

This was very good...I didn't use the full amount of brown sugar, but used a bit more Parm, freshly grated, of course. I also used a mixture of asparagus and broccoli and it was well-received by all. The bright color is a definite plus for making a dish you'd feel good about serving to anyone...in this case, it was my husband and grown kids for Easter supper...no one MORE important in my book! Next time I make "plain" sautéed spinach, I'm going to cook it with these seasonings...should be tasty!

Flavorful Flounder

Followed the recipe exactly, except for grilling. I broiled it...my filets were incredibly thin, so it didn't take long. My only issue was with the fish itself...I can't get a decent selection of fresh and frozen just never tastes as good. But the flavors of the topping helped a lot.

Oven Fries

I was highly impressed. I really think the sugar is key to the flavor *and* crispness. And the cayenne (I added a little more than a pinch) added the perfect kick. I added sweet potato to the regular potato and could have eaten the whole batch. Really good.

Garlic Cheddar Chicken

This was *much* better than the last garlic chicken recipe I tried. To be honest, I couldn't really taste the cheddar, but the Parm and garlic were very good, so that was fine with me. Followed the recipe exactly.

David's Southwest Meatloaf

This was good and smelled wonderful, but was a bit bland. I used Native Texan brand Tex-Mex style salsa, which is a medium heat, but next time I'll use hot. I had nacho cheese Doritos and plain tortilla chips, so I used a combo. I cooked it on a baking sheet instead of a loaf pan and also mixed a little ketchup with some salsa for a topping...we're not crazy about naked meatloaf. Finally, I cut the recipe in half since there are just two of us and we have tons leftover. I'm thinking about using the leftovers into a quesadilla instead of the usual meatloaf sandwiches, maybe with a chiptole mayo. Thanks for a recipe I think I can really make my own.

Cinnamon Pumpkin Waffles

The flavor is a five for sure, but these were incredibly hard to cook. They stuck to my waffle iron and even at that, took ages to cook through. If I can find out a way to keep the sticking at bay, I'd definitely make them again.

Caprese Burger

We really enjoyed these. As the submitter suggested, I used pesto (sun-dried tomato) and just a bit more chopped basil. Cooked them indoors because it was late and I didn't want to take the time to go back and forth to the grill. Served on Italian sub rolls cut in half. Will definitely make again.

Slow Cooker Italian Beef for Sandwiches

Wow. I don't care for shredded beef, roast, stew...much of anything like that, but I needed an easy entree for a potluck lunch at work and decided to try this. I tasted some, didn't like it at all, but I'm definitely in the minority! I got lots of compliments, requests for the recipe *AND* my crock pot was empty at the end of the day. Per several reviews, I used a chuck roast, two packages of the Italian dressing mix and beef stock instead of water. Cooked up tender and juicy in about 4 hours on high in my crock pot. I served it with pepperocinis, cheese and sub rolls. Won't make it for myself, but I'll definitely share the recipe and try it again for a potluck.

Alaska Salmon Bake with Pecan Crunch Coating

I think four stars is a bit generous, but we can't give half-stars, so there you go. I used panko instead of regular bread crumbs and while it was edible, it just wasn't especially yummy.

Sombrero Chicken Nachos

I made this recipe based on Sombrero Chicken and I like this version so much more!!! No bacon, not that crazy about it. Also don't like bell pepper, so I substituted poblano. Served the chicken mixture atop tortilla chips with lots of cheddar and jack cheese and cooked on a cookie sheet at 375 until crispy and melty. So good. Especially with salsa and sour cream! Have made these several times since I "created" this custom recipe.
