Hominy and Cheese Casserole

I liked hominy as a kid, so I thought I'd enjoy this casserole. It was bland and just didn't taste good to me. Sorry, but not for us. I made exactly as the recipe specified.

Crispy Flautas

This recipe was good, but not outstanding, to me. I didn't care for the cheese in the mix...the ones here don't have cheese. I also used my own homemade seasoning instead of packaged taco seasoning.

Chipotle Sweet Potatoes

Sweet Potato Turkey Hash

I made this the day after Thanksgiving with leftover smoked turkey breast and have been craving it since. My only change was to use poblano pepper instead of green...I don't like green pepper at all. No one else in the family would try it, but I loved it and ate it for breakfast for three days in a row. I'm making another batch tomorrow and plan to eat it for breakfast all week. Delicious!

Chef John's Caramel Chicken

I am ONLY reviewing the sauce because I went in a different direction with my chicken. I used rotisserie chicken thighs and French cut green beans and almonds. I made the sauce exactly as written and just reduced it down, then added my chicken, green beans and almonds to heat through. Served over brown Jasmine rice with egg rolls on the side. The sauce is *wonderful* and would be good on just about any Asian-inspired sauce you chose to use it in. I will definitely make this again, maybe even as written sometime! But I dunno, my version is going to be hard to beat. :-)

Chicken Scarpariello

This was simple and quick, but a little lacking in flavor. It sort of tasted like chicken noodle soup when I served it over angel hair pasta. That said, the chicken was tender, so I think perhaps with an addition of more spice and some crushed red pepper, this would be a dish I'd repeat.

This was fine, but in my opinion, AR has lots of similar dishes with much more flavor and not a lot more work. Do yourself a favor and try a different recipe.

Poblano Chile Enchiladas a la Gringa

Absolutely wonderful! I love poblanos, so I knew these would rock. The only change I made was not dipping the tortillas. I always steam tortillas in the microwave and that makes them perfectly pliable without having to do all that dipping. These were great and we will definitely add them to our regular enchilada rotation!

Breakfast Quiches to Go

I used different fillings for these, jalapeño and sausage and no cheese, but that didn't change the reason for my low review. These were good the day I baked them, but canned crescent rolls taste so weird and wrong after they are reheated and that totally ruined these for me. Easy to make and good for immediate eating, but not for reheating.

Tex-Mex Beef and Cheese Enchiladas

These taste almost exactly like the enchiladas I grew up eating. For our tastes, though, there is about twice as much chili as we need, so I saved it for another batch. These are *very* Tex-Mex...mild, not spicy, which makes them the ultimate comfort food, in my opinion. They are quick, but if you want save even more time, just layer this for a casserole. Either way, so tasty.

Fall Festive-tini

Delicious. Extremely. I didn't rim my glass, but I made it exactly as the recipe states, with a clear schnapps and Absolut pear vodka. I used regular ginger ale, but next time I will probably use diet. Perfect for our first cool fall evening after a HOT Texas summer. I'll making this one often.

Breakfast Quiches to Go

I changed what I put inside these...sausage and jalapeños, no cheese...but I don't think that makes a difference for this review. My main issue comes from how weird canned crescent rolls taste after they sit. I always like things like this fresh, but upon reheating, they are not even remotely as good. I've been trying to find something with eggs to reheat each morning for a quick breakfast, but this is my second try at a recipe with Pilsbury crescent rolls and I'm definitely NOT trying any more.

Four Cheese Sauce

Simple, delicious and tasty! I just added a bit of freshly grated nutmeg and served atop fettuccine. I garnished with toasted chopped walnuts and fresh basil. Served with French bread and green salad. Easy, but wonderful weeknight meatless meal.

Chicken Tinga Tortilla Cups

Instead of salsa, I added chiptole sauce and onion, since that's how we eat tinga. I also grated my own Jack and cheddar cheeses because I refuse to buy pre-shredded cheese. Very, very, very quick and easy, which is exactly why I tried this idea. Sort of like a chicken taco salad.

Old Time Chicken Divan

We loved this...I don't keep sherry around, so I substituted white wine for that. I steamed my broccoli, added some fontina cheese and freshly-grated nutmeg to the sauce and used rotisserie chicken because I had some leftover from another dish. I layered the sauce, the broccoli and the chicken over cooked brown rice and baked at 350 for about 20 minutes. Very good and the leftovers went quickly!

Grilled Fish Tacos with Chipotle-Lime Dressing

Made the marinade and dressing Just as in the recipe, but only marinated about two hours and used catfish. Dressed broccoli slaw with some of the dressing and drizzled a bit more over the top with an additional squeeze of lime juice. Very, very good...probably my favorite of the many fish taco recipes I've tried.

This was very good and simple to throw in a slow cooker. I didn't use Goya products because I don't have any...but I keep all these things on hand, so this was a great pantry meal for us.
