Cream Cheese Jalapeno Hamburgers

I just didn't care for these...the cream cheese flavor totally overwhelmed the peppers and I didn't skimp on the peppers. They just weren't spicy at all *AND* I had a ton of the cream cheese mixture left over even after cutting it in half. I probably won't make these again...EDIT: I tried this again recently with a completely different method. I used 1/4 the amount of the cream cheese and roasted and chopped my jalapeños before *mixing* them into the meat and forming patties. They were much more flavorful and the cream cheese enhanced the flavor rather than overwhelming it. If you change the method, these are tasty!

Creamy Asparagus Pasta

I found this recipe when I was looking for ways to use up some asparagus that I'd had for several days. I roasted the asparagus rather than sauteeing it and I used a bit less butter, more garlic and angel hair pasta instead of the pasta suggested. I also added some leftover roasted chicken. It was quick and easy and tasted good...thanks for a great starting point with this recipe!

Red Enchilada Sauce

This was my first time to make enchilada sauce...we usually eat enchiladas topped with either chili con carne or a sour cream sauce, but I wanted to try a recipe that called for canned enchilada sauce. Rather than buying a can (yuck) I made this recipe. It was quick and easy and made with ingredients I almost always have on hand. It made enough for spinach enchiladas for three of us, with plenty left over to freeze for another time. Thanks!

Cornell Chicken Marinade

It's hard to know how to review this one, I changed it up some before I made it after reading so many reviews about it being too vinegary. Off the bat, I cut the vinegar in half, COMPLETELY cut out the salt, and I only marinated the chicken breasts for three hours. I didn't change the proportions of any other ingredients. They grilled up nicely and I basted with some reserved sauce and added a sprinkle of salt at the end of cooking. I thought they were ok, my husband said they were pretty good. I'll probably try them again sometime, but I think there are other marinades out there that give chicken a greater kick. so I'm giving it four stars

Donut Muffins

Add my family to the growing group of people loving this recipe! I just finished the first batch and ate one...oh my wow...they are great. I made them exactly as the recipe stated, but I only dipped the tops into butter and then the cinnamon/sugar mixture. My daughter ate two and said these should definitely be on the menu for her graduation party next week...I totally agree! Thanks for a great, simple, delicious recipe that doesn't require any special ingredients.

Spinach Enchiladas

These were a HUGE hit tonight for supper! My daughter isn't a vegetarian, but she doesn't eat much meat and I had a feeling she'd enjoy these. I had some leftover roasted chicken, so I chopped that finely and added that to the spinach mixture on the last few enchiladas, just to use up the chicken. They were creamy and tasty...not at all spicy, but that's ok in this case. I also don't like canned enchilada sauce, so I madE my own from a recipe here at AR. Definitely a keeper and one I'll make frequently.

Buffalo Chicken Soup

Incredibly Cheesy Turkey Meatloaf

This grew on me...at first, it didn't seem exceptionally great, but after a while, the flavors grew on me. And when we reheated it the next day for meatloaf sandwiches, I was surprised by how much better it was the second time around. Thanks!

Broccoli Cheese Soup V

With the changes noted in my footnotes, and by using ROASTED broccoli or cauliflower (my favorite), this is a wonderful, wonderful soup. I also use shallot instead of onion and add a pinch or two of nutmeg to give it just the right flavor. It's my favorite soup of all time.

Parmesan and Basil Chicken Salad

I didn't puree the ingredients for this and I never use full-fat mayo, but otherwise I made as directed. Ate it on a wheat bun as soon as I mixed it up and it was quite tasty...I imagine it will be even better after it chills a while. Thanks for a chicken salad that's different than my usual and one that gave me a chance to use some of my freshly-harvested basil!

Super-Simple, Super-Spicy Mongolian Beef

I'd give this five stars for super simplicity and three for the lack of super spiciness...it really didn't have a punch of flavor liked I'd hoped. We added red pepper flakes *after* it was cooked to punch it up a bit. I think that next time I'll add some ginger *and* more pepper. I used the same marinade on tofu for my daughter and served it all with fried rice and roasted broccoli. Overall we enjoyed it and with changes, will definitely make it again. Thanks!

Exquisite Pizza Sauce

I made my own sauce for years and it was *almost* exactly like yours, but I'd never added honey, anchovy paste or marjoram...just the addition of those few ingredients makes this absolutely exquisite! Thanks...I'll never make another pizza sauce now.

Strawberry Vanilla Pancakes

These are *very* good. I used skim milk because we never have whole on hand and my batter was pretty thick and the pancakes were a bit heavy, but i think that suits this recipe...it's almost like dessert! Thanks for a good recipe.

Michelle's Peanut Butter Marbled Brownies

I didn't eat these, not a peanut butter or chocolate fan, but I made them for people who are and they RAVED. I gave 1/2 to my MIL for Mother's Day and my husband and daughter got the other 1/2. Made them Saturday and they were almost gone by Sunday evening. Thank you!

Mexican Chicken Kiev

I really enjoyed this! Made it at the last minute because I saw it recommended on the RE, so I had to use chopped green chilies. I only made three breasts, which is MORE than enough for three of us, but I didn't change anything else. Very mild, but very very tasty!

Caesar Salad Supreme

I really loved the dressing for this...but it made a LOT! Way more than I needed to serve the salad two times. That's the only thing I'd change next time...making a lot less! Thanks for a good recipe...I rarely eat Caesar salad out because the pre-made dressings suck!

Mango-Strawberry Salsa

Yum! I wanted to serve this as a savory salsa, so I added a jalapeno. I used the liquid to marinate chicken breasts and grilled them, then topped with the salsa. Excellent and I'll use this often when mangos are available.
