Broccoli Cheese Soup V

With the changes noted in my footnotes, and by using ROASTED broccoli or cauliflower (my favorite), this is a wonderful, wonderful soup. I also use shallot instead of onion and add a pinch or two of nutmeg to give it just the right flavor. It's my favorite soup of all time.

Parmesan and Basil Chicken Salad

I didn't puree the ingredients for this and I never use full-fat mayo, but otherwise I made as directed. Ate it on a wheat bun as soon as I mixed it up and it was quite tasty...I imagine it will be even better after it chills a while. Thanks for a chicken salad that's different than my usual and one that gave me a chance to use some of my freshly-harvested basil!

Super-Simple, Super-Spicy Mongolian Beef

I'd give this five stars for super simplicity and three for the lack of super spiciness...it really didn't have a punch of flavor liked I'd hoped. We added red pepper flakes *after* it was cooked to punch it up a bit. I think that next time I'll add some ginger *and* more pepper. I used the same marinade on tofu for my daughter and served it all with fried rice and roasted broccoli. Overall we enjoyed it and with changes, will definitely make it again. Thanks!

Exquisite Pizza Sauce

I made my own sauce for years and it was *almost* exactly like yours, but I'd never added honey, anchovy paste or marjoram...just the addition of those few ingredients makes this absolutely exquisite! Thanks...I'll never make another pizza sauce now.

Strawberry Vanilla Pancakes

These are *very* good. I used skim milk because we never have whole on hand and my batter was pretty thick and the pancakes were a bit heavy, but i think that suits this recipe...it's almost like dessert! Thanks for a good recipe.

Michelle's Peanut Butter Marbled Brownies

I didn't eat these, not a peanut butter or chocolate fan, but I made them for people who are and they RAVED. I gave 1/2 to my MIL for Mother's Day and my husband and daughter got the other 1/2. Made them Saturday and they were almost gone by Sunday evening. Thank you!

Happy Shrimp

This was really good! I think it could have used a bit more spice, so I'm going to add some Old Bay next time...used these "happy" fellows to top cheese grits for Shrimp and Grits, one of my daughter's favorite meals! Thanks.

Mexican Chicken Kiev

I really enjoyed this! Made it at the last minute because I saw it recommended on the RE, so I had to use chopped green chilies. I only made three breasts, which is MORE than enough for three of us, but I didn't change anything else. Very mild, but very very tasty!

Caesar Salad Supreme

I really loved the dressing for this...but it made a LOT! Way more than I needed to serve the salad two times. That's the only thing I'd change next time...making a lot less! Thanks for a good recipe...I rarely eat Caesar salad out because the pre-made dressings suck!

Mango-Strawberry Salsa

Yum! I wanted to serve this as a savory salsa, so I added a jalapeno. I used the liquid to marinate chicken breasts and grilled them, then topped with the salsa. Excellent and I'll use this often when mangos are available.

David's Yellow Cake

This was my first from scratch cake ever. Tasted great, baked well, but I was totally unsure how full to fill my cupcake liners. I did 2/3 like box mixes recommend, and that was WAY TOO much...the tops spilled way out over my muffin tin. I was topping these with fondant for a birthday, so I had to hand-trim the excess off of each. I'd like to see this recipe with recommendations for different types of cakes.

Spinach Chicken Parmesan

I only used three breasts and still had way too much chicken for only three people. But, it was good and everyone enjoyed it. I added some panko bread crumbs to the cheese mixture, otherwise I kept the recipe as it was written. Will eat again, thanks!

Spinach Apple Salad

I made the dressing exactly as written, but I changed up some of the ingredients. I had a lot of spinach to use, so I didn't use the romaine. I used shallot instead of onion, omitted the raisins and added sunflower seeds. Very good and it only takes a bit of dressing to flavor this nicely. Thanks!

Lightened Potatoes Au Gratin

These are great! I just made them a bit ago for our supper tonight. I don't usually have russets on hand, but I had fingerling potatoes and I used shallots instead of onion. Didn't change anything else...the small slices of the fingerlings look rather cute and the taste is just as filling and satisfying as full-fat au gratin potatoes. Thanks for a really good recipe!

Broccoli Cheese Soup V

I took JARRIE's advice from her review and changed the method completely. I also used fresh broccoli and shallots instead of frozen and onion. Used a bit less Velveeta and added a bit of nutmeg. Then I blended most of the soup to smooth it out a bit. With the changes, I LOVED IT!!! My favorite broccoli cheese soup to date. Thanks for the recipe starting point! EDIT: I used roasted cauliflower to make this soup this weekend, using the same method. WOW...wonderful, wonderful! I will make this often.

The Real Deal Sloppy Joes

Yummy! I think these really have that "real deal" school cafeteria flavor...they were simple and really good. I did leave out the bell pepper for personal preferences, but did everything else exactly. Served them open-faced on garlic toast. Thanks for a keeper, SouthernGma!

Chicken Fajita Melts

I made a lot of changes to these, but I think that I did enough to retain the overall flavor. I made my own taco seasoning because I can't stand the packaged stuff. I used a thicker cut of bread and toasted it before assembly. I also marinated the sliced chicken in the seasoning and a bit of oil and grilled it outside, then sauteed onions (no peppers...we don't like bell pepper). I added chicken and onions and cheese to each sandwich and then grilled them as sandwiches in the panini maker instead of making them open-faced melts. I passed salsa and sour cream at the table and everyone LOVED them. I know this is a lot of changes, but I just liked the idea of the panini and I wouldn't have attempted it without your idea. Thanks!
