Mama's Best Broiled Tomato Sandwich

We *LOVED* these...my husband gave me a thumbs up and an "excellent!" on the first bite. I followed the recipe exactly, *except* that I added a very thin pan-fried chicken breast seasoned with lemon pepper, dill and garlic to each sandwich. While these would be absolutely fantabulous on their own, I just wanted the extra protein for our meal. Thank you so much for a wonderful recipe that I'll use OFTEN! ETA: I never do this, but I had leftover chicken, so we had the exact same meal two nights in a row. These are just that good.

Halibut with Zesty Peach Salsa

Excellent...I can't think of a thing I'd change about this recipe. I did use catfish instead of halibut, but kept everything else the same...I think the marinade would also be great for making grilled fish tacos!

Crash Hot Potatoes

Very good, great way to use fresh herbs when they're going nuts in the garden! The best thing about them is the simplicity with a big showy payoff. I often roast potatoes, but the "crashing" gives them a unique look and crisps them wonderfully.

Pasta Pomodoro

I cut this recipe way down...there are just three of us and I only eat very small amounts of pasta. But, someone had Pomodoro when I was out to lunch with them recently and I thought it looked simple to recreate. I had some Byrdhouse Blistered Cherry Tomatoes left over and decided to add them (without chopping) to the sauce at the very end and it put this over the top, in my opinion. I let the sauce simmer much, much longer than the recipe suggested and it was thick and very tasty. Everyone loved it and we'll definitely have it again...it's so easy you'll memorize the recipe the first time you make it.

Byrdhouse Blistered Cherry Tomatoes

Wow! Simple, delicious, gorgeous even with store-bought tomatoes. I can't wait to try this with my own cherry tomatoes. My only "issue," which wasn't really an issue at all, is that it took more than 30 seconds for my tomatoes to begin to blister...quite a bit more. I also used 1 tsp. butter and 1 tsp. olive oil! Thank you...I love these!

Dry Buttermilk Ranch Mix

I'm so glad I finally found buttermilk powder! I probably quadrupled the dill, because I *knew* I'd want more and it's so good. I used some to make a buffalo chicken sandwich for lunch. YUM. I mixed this up in a little Mason jar so I could just shake it up after I added the ingredients. It looked so pretty before I mixed it that I'm thinking seriously about packing it up this way and giving it as gifts. Thank you, Scotdog! Love this stuff...

Smoky Swiss and Bacon Dip

Yum!! So delicious...when I first heard about this recipe, I didn't realize it had bacon and I prefer NOT to eat bacon, so I left it out...everything else stayed exactly the same. It's got a smooth, smoky flavor that stands up well to crackers. I imagine it being great with a cold beer while relaxing in the back yard. Try this...you'll be glad you did. Thanks, Jaxmamma.

Grilled Spice Rubbed Chicken Breasts with Alabama BBQ Sauce

I don't like traditional Texas bbq chicken, so I thought this might be a good alternative. I've never heard of a mayo-based bbq sauce, but it was surprisingly good *AND* it honestly kept the chicken very tender on the grill. I used low-fat mayo, but didn't change anything else...*MAYBE* added a bit more cayenne than it called for. I grilled at a pretty high heat and used the rub on both sides of the meat...it seemed weird to just put in on one side. It didn't take long. Definitely cover and wait before you cut into it. I served this with roasted potatoes and a green salad and it was a quick, easy, tasty summer meal. I only used three breasts and have a lot leftover. I'm going to make sandwiches on hamburger buns with the leftover sauce as mayo for lunch tomorrow. Should be delicious!

Quick and Easy Alfredo Sauce

This wasn't *nearly* as quick as I expected it to be...especially when it says the sauce thickens rapidly. I made it exactly as the recipe states and it took about 10 minutes to finally thicken. I kept thinking I'd done something wrong. After I tasted it, I stirred in a pinch of nutmeg and wished I'd used real garlic instead of powder. It was easy, but I'm not sure it was any easier than a "regular" alfredo sauce. Thanks for sharing your recipe.

Mushroom/Turkey Burgers

These are so good...someone on the RE mentioned this as their method for turkey burgers and I tried them this weekend. I made sliders and topped them with American cheese...I love the way it melts on a burger. My husband has already eaten four and I was planning on them for myself, thinking he wouldn't care for the mushrooms! We'll definitely be having these again!!

Kettle Corn

Very good stuff! So much better than microwave popcorn, plus it's easy and kind of fun to make. I put a few kernels in and waited for them to pop, then stirred in the sugar and the popcorn. It took about three minutes. Added a little salt, let cool and enjoyed with our Saturday afternoon movie. I'll do this often! Thanks.

Amy's Delicious Turkey Burgers

These were great! My favorite turkey burger so far...and they cooked up perfectly on the grill. I used plain Ritz crackers because that's all I had, but I'll pick up a box of cheese crackers just for this recipe. We served them on thin bread instead of burger buns. There were only two of us eating, so I'm looking forward to a leftover patty for lunch tomorrow. Thank you for a great a recipe!!

Mango Salsa Chicken

This was great...I added some things to the salsa...pineapple, lime juice and a bit of strawberry, based on other salsas my family has enjoyed. The breaded and pan-fried chicken isn't anything new either, but what really made this dish was putting them together. It seems like it wouldn't work and that's really what made me decide to make this dish...but it *DOES* work and it's really, really good. We all cleaned our plates...thank you so much for a really good, simple recipe that we will definitely eat again and again.

Cottage Cheese Salad

Yum!! Loved this...I just saw it recommended on the Recipe Exchange and had all the ingredients on hand, so I made it for my lunch. I love all the ingredients, so it figures I love the salad! I added about a tablespoon of Red Italian Dressing (from this site) and it's to die for. This is my new go-to summer snack/lunch when I don't have any leftovers. Thanks!!!

Red Salad Dressing

Overall a good dressing that I enjoyed on my salad tonight. I made it in hopes of duplicating house dressing at a family-owned Italian restaurant in our suburban town...it was close, but not *quite* there. I used red wine vinegar instead of distilled and shallot instead of onion. Overall, this was also too sweet, which is why I only gave it four stars. Next time, I'll cut the sugar in half and go from there. I'm also going to try the same ingredients, but sub thinned tomato paste or sauce for the ketchup...it won't still be your recipe this way, but it might put me closer to the restaurant's recipe! EDIT: I have started making this with tomato sauce instead of ketchup and cutting the sugar in half and it's become my VERY favorite salad dressing! Thank you...I wish more people would give this a try.

Slammin' Salmon

I love salmon, but I was expecting a lot more flavor in the marinade...especially from the ginger and balsamic...I couldn't really taste them in the final product. Still, it was good and I think next time, I'll set aside some of the marinade and reduce it to make a sauce for the finished fish.

Grilled Garlic Parmesan Zucchini

I love zuchinni and had high hopes for this. The flavor was good, but I thought it ended up way too greasy from the butter. I think next time, I'll cut that way back. The garlic and parm were great though!

Shrimp Salsa

Yum! Great flavor...I'm not always crazy about cilantro, but you really need it here. I had to use frozen salad shrimp, next time I'm just going to chop up bigger shrimp that I cook myself. And there will definitely be a next time! I used tomatoes from my garden and probably cut the onion just a bit. I might add a bit of jalapeno next time because I do love heat, but honestly this is GREAT just like it is. Thanks, Witchywoman...wonderful recipe!!
