Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

Extremely good and so totally simple. I'll never buy blue cheese dressing again. Mine was quite thick, so I thinned it a bit with some milk and after it sat for a while, I added more garlic powder. Lovely on a wedge salad with tomatoes.

Simple Turkey Chili

Simple, delicious....absolutely wonderful. I usually make a Texas-style chili because that's what I ate growing up, but I wanted to use turkey and found this recipe. Beans in chili are *wonderful* and I wish I'd tried it before I was so old! made exactly as per the recipe...but I might add some jalapenos next time to give it a bit more of a kick. Thanks for a fabulous recipe...this is going into my favorites. EDIT: I make this recipe so often I don't even need the recipe anymore. I add double cumin and if it's just for us at home, more cayenne. I've taken it to parties, potlucks and made it for my parents and father-in-law, all to rave reviews. It freezes like a dream and makes enough for 7-8 meals for my husband and me. My husband loves it over Fritos with cheddar cheese on top. We *never* get tired of this chili.

Pesto Cheesy Chicken Rolls

This was quick and easy. I have a *lot* of homemade pesto right now, so I used this idea. I dredged the rolled breasts in egg and breadcrumbs to add some flavor. Will keep handy for quick weeknight meals.

Buffalo Chicken Burgers with Blue Cheese Dressing

I knew I'd like these...I love buffalo chicken and all the extras. I made changes, but I don't think any of them changed the integrity of the recipe I added some hot sauce to the dressing mix and also added the celery to the dressing, just so there would only be one topping for the burger. I also added several chopped crimini mushrooms to the burger, just to keep it moist. These were VERY hard to work with, even after freezing the mixture for a bit before I formed the patties. I tried using a burger press and wax paper, but ended up having to just scrape the patties off the paper, so that was a bust. I might try freezing them solid next time before cooking. The most important part of these is the taste, though, and that was wonderful! I will make these again and again.

Ranch Dressing II

This is the ranch dressing I've been looking for...I tried several from this site and none worked for my tastes. This one is just right. I halved the mayo and subbed sour cream for the other half, and used all fat free or reduced fat products, but kept everything else just the same. When I have fresh dill, I'll use that instead of the dried, but this works perfectly and I can finally say that I make *all* my own salad dressings. Goodbye preservatives and chemicals!

Tart Lemon Ice Cream

LOVED this! Based on other reviews, I cut the sugar to a little over 1/2 a cup and that was fine. Lovely, lovely lemon flavor...I wanted to eat the zest and sugar by itself...the scent was amazing! Everyone loved this...it set up and froze nicely. We'll definitely make it again!

Cherry Tomato Corn Salad

I am not usually a fan of salads that aren't mostly greens. Can't stand potato salad or cole slaw or bean salad...but this one caught my eye. I love tomatoes and this didn't have any ingredients I don't enjoy. I didn't make any changes and it was pretty good. I did find the basil and tomato a *bit* stronger than the corn/cucumber, but it's definitely a change of pace for me and something I'll eat again.

Marshmallow Fondant

I've had this recipe in my box forever and finally got around to trying it. It was *fairly* easy to put together...however, my "dough" ended up being very hard even before I added all the powdered sugar. I used marshmallow creme instead of marshmallows, simply thinking it would save me a step. In the end, though, I had to add more water to get it all to *finally* incorporate. I'd read lots and lots of reviews prior to making and add plenty of Crisco on hand because I read so much about the stickiness, but barely needed any. I also pictured this making a huge mess and driving me nuts, but that didn't happen at all. As far as taste, I personally don't like it any better than store-bought fondant, but I do like that I can make it myself and with so few ingredients. It took gel paste coloring well and so far, as been fairly easy to work with and make cupcake toppers. It's just sitting in my fridge right now, waiting for me to be inspired to create something.

Shrimp Francesca

I made this on the spur-of-the-moment after I bought shrimp. I wanted something with garlic and lemon and the idea of artichokes was intriguing. I didn't add quite as much butter or bread crumbs as suggested, and added some capers at the end; otherwise I didn't change a thing. The richness of the butter and breadcrumbs worked perfectly with the bite of the artichoke and capers. This was quick, easy and yummy and my daughter and I loved it. We served it over brown rice and will definitely be making it again.

Ranch Dressing with Fresh Herbs

I wanted to love this dressing; I've been making my own and still looking for a great ranch. I knew two raw shallots would be overpowering, based on past experience. But, unfortunately, just one was too much as well...all I could taste was raw shallot. I'm not sure what to do about that, but if I figure it out, I'll finally have the homemade ranch I'm looking for.

Ranch Dressing with Fresh Herbs

I really wanted to love this dressing. I started making my own dressings about six months ago, but haven't found a great ranch. This one got me excited; I love the idea of fresh herbs and since I grow dill and parsley, I was set. From past experience, I knew from the get-go that 2 raw shallots would be too much for my taste. Unfortunately, cutting it back to one small one didn't help a bit. After chilling for 5+ hours, the raw shallot was overwhelming. The other flavors are totally lost. I do like the ratio of sour cream, buttermilk and mayo. If I can figure out what to do about those shallots, I might give this another try, but as is, I wouldn't make it again.

Turkey and Quinoa Meatloaf

I've tried quinoa several times and have never really enjoyed it. I decided to make this recipe on a whim one evening when I had turkey to use up. Finally, quinoa I liked! I didn't change a single thing and thought this was a great meatloaf. I think next time I might add a different topping, but it's quite good just as it is. :-D

Sausage Stuffed Mushrooms II

I suppose it's a matter of personal taste, but I felt like this had *way* too much cream cheese. I read several reviews after I made them that said they baked them, not just broiled, which I think is a good idea. I also like the idea of adding some parm and perhaps a *few* bread crumbs or other seasoning and the idea of pulsing the stuffing mixture in a food processor a bit to make it smoother. I'll try them again with those changes and I have a feeling I'll like them better.

Tacos De Matamoros

Excellent, excellent way to cook taco meat. I have hated the packaged seasoning for so long and never use up a whole batch if I make my own, so this makes sense for us. I halved the recipe and there was still enough meat for three meals for two of us. Simmering in water is just the *perfect* way to make the meat tender and tasty! Thanks for a great recipe.

Neat Sloppy Joes

As is, these sloppy joes were WAYYY too sweet for my family's taste, and that was cutting back some on the brown sugar. I also used a can of tomato sauce instead of tomato soup, again to cut back on sugar. I ended up adding much more vinegar, some smoked paprika and mustard in an attempt to cut the sweetness. Turned out ok, but they weren't this recipe in the end. Sorry, but I won't be making this one again.

Five Ingredient Ice Cream

This was an interesting experiment...after four hours in a 9x13 2-quart dish, it wasn't near an ice cream consistency. After 6+ hours, it was a bit better, but wasn't close to what I think of as ice cream. My husband and daughter ate some anyway and said it tasted like the soft-serve at Sonic and suggested that we add things to it to make it like their Sonic Blasts. I'm not sure if it's worth the effort to try again...I feel like I'd be better served to buy an ice cream maker.
