About this Cook
I am Mommy to my handsome son, Aidan and beautiful daughter Averie. When I am not being Mommy, I work full-time in property management. My favorite past time is cooking, and I find it great to just hang out in the kitchen and try new recipes - my husband always complains that I always cook as if I am cooking for a party of ten (however he still manages to always finish the leftovers!)
My favorite things to cook
Anything with a tex-mex flair, italian classics like lasagna or fettucini alfredo or southern favorites like fried chicken or chicken fried steak.
My favorite family cooking traditions
My favorite cooking tradition is fairly new to me. Every year in December we get together with my mother in-law and my sister in-law and we make hundreds of tamales. I had never made a tamale before meeting my husband and I never realized how much work they are. But every year we get together and we sit around the kitchen spending time with family and assemble our tamales. Yum!
My cooking triumphs
I'm still thinking on this one, I honestly feel that anything I make that tastes delicious could be considered a triumph.... I'll have to keep thinking and come back to this one.
My cooking tragedies
I almost set my kitchen on fire. I was making stir fry and I had been letting the oil get hot in the pan when all of a sudden my son was calling for me, well I felt like I had only been distracted for a few seconds but it must have been longer because my oil got so hot that when I threw my veggies (which were a little damp from recently being washed) into the pan, the oil caught fire and the blazes almost hit the ceiling. Luckily I got the flames out immediately and then I had to stop dinner to console my frightened 3 year old and get the smoke detectors to turn off. I think back and I chuckle but I also know I was very lucky it could have been much worse.

Antipasto Pasta Salad
This was very good, I omitted the olives and added skiced pepperoccinis (personal preference). I did not make the dressing, instead I used Kraft Parmesean Basil Vinagerette, it was very easy and tasted great!

Autumn Cheesecake
Very good, I did bake it in a water bath and took the advice of others and microwaved the apples a little to get some of the liquid out. My only complaint was that I had to cook it abot 30 minutes more than the recipe stated.

Puttanesca I
This was very good, I used anchovy paste instead of the fillets and omitted the olives at my husbands request. Next time I will add some chicken because my hubby couldn't believe there was no meat in the dish.
