Sunday my husband was having a cousin come into town, so I had to find a nice and easy recipe that would taste good. Personally I don't like fried chicken, so I had to look a little while before I was able to find this recipe. When I finally found Cheddar Baked Chicken, the simplicity of the… MORE

Tuna Noodle Casserole I
I only gave it four stars cause I made alterations. I wanted to add more flavor, so I followed a previous review and used onion soup mix the first time I made it. The second time however, I couldn't find the mix, so I used french onion soup instead of the milk. I added a bit of thyme and red wine, doubled the sauce mixture and the tuna. I also used more cheese because my DH and I both are cheese lovers:) it comes out delicious every time!!

Cheddar Baked Chicken
OMG!! I did make a few alterations...as in adding some different spices, but it was to die for! I normally make 4 pieces of chicken for dinner. It's just my husband and I, so if the chicken is good, we will split half of one of the extra breasts and then he will have an leftover one to take to work the next day. This was so awesome, we both ate 2 breasts!! Unheard of...lol The alterations I made were: I didn't have the crispy cereal so I omitted it. When I mixed up the flour mixture I added in cumin since I would be using a Mexican blend shredded cheese (thought I would incorporate some Mexican into the chicken), extra garlic and a shake or two of chayenne pepper to give it a bit of spice. I had Italian bread crumbs, but since I was going for the "Mexican" flavor, I used roasted garlic bread crumbs instead. It turned out soo fantastic! The yellow rice I paired it with paled in comparison!!

KISS Salmon
Tonight was the second night I've made this. Loved it both times. I did alter it a bit by rubbing thyme on both sides (it was skinless) I then let it marinate a few hours in the BBQ sauce (didn't have the raspberry jam) and since there was no skin, I put some onions under the salmon when I cooked it. Left it in for 30 mins and it was perfect. Hubby and I will oth add this to our food menus!
