Slow Cooker Chicken Cordon Bleu

Reviewed: Mar. 19, 2011
Served this a few days ago. My husband and I loved it. He has requested that this be in our regular rotation. This was so easy and took little time to prepare. The chicken was so tender and the stuffing added a great touch. I did hold off on the cheese and added it just before serving so it didn't disappear. It melted nicely over the top of each chicken breast. Will be making this again and again. Thanks for a wonderful recipe.

Spinach Cheese Pasta

Reviewed: Jan. 5, 2011
I LOVED this recipe. I made it last week exactly the way the recipe was written. I understand that there are some people who don't like cottage cheese, so they substitute ricotta. I did not because I love cottage cheese. I made no substitutions in this recipe the first time I made it. It was delicious, fast and easy! I am keeping this and will make it again and again. Thanks for a great recipe!! I made this again for dinner tonight. I did do a couple of add-ins. I added one can of chicken (no broth) and some bacon bits. I wanted to up the protein and use it as a main dish not a side dish. I think next time I will also add in some sun-dried tomatoes. I love the way spinach and sun-dried tomatoes taste together. This is an awesome recipe that lends itself to deliciousness with or without extras. Bon Appetite!

Shoyu Chicken

Reviewed: Jun. 1, 2010
I made this chicken yesterday for Memorial Day at our annual family picnic. It was awesome. I made it exactly as the recipe said. I could not have asked for a better recipe to make chicken new again for the family. They all loved it. I got asked for the recipe more than once and I was very happy I took copies of the recipe with me. Excellent recipe. I will be making this a lot this summer. Thank you for a most delicious recipe!!!

Spinach and Strawberry Salad

Reviewed: Jun. 1, 2010
I made this for a very large gathering this Memorial day. It was a big hit. Even the kids loved it. I will be making this salad as long as there are fresh strawberries. The dressing is to die for...LOL. I didn't have any white wine vinegar, so I used my champagne vinegar. Was a good substitute. Thanks for this awesome salad recipe. Can't wait to eat it again!!

Herb Roasted Pork Loin and Potatoes

Reviewed: Apr. 16, 2010
I made this for dinner tonight. Wow...what wonderful flavor. I did this in my electric skillet because I live in an RV and my oven is useless. I browned it first on all four sides. Turned it down to 300 degrees and then added the potatoes. From here on I followed the recipe exactly except I added sweet potatoes with the white potatoes.. This is a super recipie and my DH and I loved it. Thank you for a wonderful recipe. This will be in our regular rotation...which is about every other month now with all the great recipes I've gottenfrom AR. Thanks for brightening my horizon on Pork Loin...I am begining to love it!

Thousand Island Dressing II

Reviewed: Apr. 11, 2010
My recipe differs a little as I use dill relish and garlic salt. We also use low sugar ketchup. I grew up on this and it is very good. You can add almost any flavor to this dressing and it will taste good. We now add about a foruth to a half teaspoon (personl taste) of chipolte powder to this and it really gives it a kick. Thanks for sharing.

Tomato-Curry Lentil Stew

Reviewed: Nov. 5, 2009
Thank you for a great recipe. I added some other veggies to this, and used chicken stock instead of water, but the basic recipe is wonderful. I made this for dinner tonight and my husband loved it. I made enough so he could take some to work tomorrow. I served it with whole wheat rolls. He is one of those fellas that thinks you have to have meat at dinner. Well, he had two bowls and then I told him there was no meat in it. He just smiled and said this is a wonderful meal. This dish is a keeper. Will put it into our regular rotation

Thank you so much for the recipe. My MIL used to make these and I needed the recipe. I am surprising my husband with these tonight. Perfect recipe for beets. Makes them so tasty. Wouldn't change a thing in this recipe.

Orange Pork

Wow...I made this for dinner tonight and my husband can't stop raving about it. I did use a few of the other suggestions and doubled the sauce from the start. We loved this and will make it again. As my husband said...this is a keeper. Can't wait to try it on chicken too. Thanks for such a wonderful recipe.

Crispy Mashed Potato Pancake

Reviewed: Oct. 1, 2009
I have made these for years. I raised 7 kids on them and they all loved them. We used more "smashed" potatoes than mashed. I prefer to have bits of potatoes in them. I have always added flour to these to help keep them together. Add a tablespoon at a time. Just until they have a "sticky" texture. I drop by tablespoon into the pan and they seems to "flatten" out by themselves. The trick really is to cook them until the one side is really browned, 8 to 10 minutes before turning. Otherwise they will fall apart. You can add all sorts of ingredients to these. Garlic, bacon bits, onion and cheese are our favorites. Sage is good in these too. We have these for breakfast as well as lunch or dinner. These take a little time to make, but are oh so worth it!

Apple Crisp II

Reviewed: Aug. 24, 2009
This is very good and easy. I have used canned peaches with this too. That is the only change I have made. My kids grew up on this and now I am serving it to my grandchildren. They love this and ask for it all the time. Thanks for sharing the recipe.
