Zucchini Cornbread Casserole

Main Dish hit! My kids aren't fans of zucchini but this was a hit! I accidentally mixed in all of the cheese so didn't put any on top. I shredded the zucchini lengthwise so had long shreds. I divided the mixture into two brie bakers instead of a 2-qt. baker and baked them for 40-45 minutes. It was a bit difficult mixing with the longer shreds but it turned out GREAT! without the cheese it was lightly browned on the top and we all enjoyed it as our main entree. Kids have asked for this to be on the regular list. NOTE: I did not add any salt or pepper to the mix and it was perfect for us.

Rueben Loaf

This was a hit with every member of the family. I definitely took some liberties with the recipe. I used the refrigerated french bread loaf and unrolled it to "load it". On half of the loaf I used the ingredients stated with the exception of using Thousand Island Dressing instead of yellow mustard. On the other half, I used the rest of our roast beef (sandwich meat) and coupled it with Russian dressing and American and cheddar cheese. Both sides were totally devoured with many pleasant comments. Thanks for posting! Now I know what to do with our lunchmeat before it goes bad!

Cream Cheese and Ham Spread

I liked this but it was a bit bland. I put my ham through my meat grinder and mixed it with the other ingredients. Later I added some dipping mustard which put it over the top.

Pear and Gorgonzola Cheese Pizza

This combination works. I used a Schwan's cheater crust and topped it with this recipe. I had 2 pears and used them both so added a bit of extra cheese. I would do this again with the exception of not adding any extra Gorgonzola. Mine was quite potent and I definitely had too much. Thanks for posting!

Fiber One® Chocolate-Peanut Butter Haystacks

Oh My! I think I got my daily fiber allowance by licking my fingers on this one! What a great recipe and versatile too. I used Bakers semi-sweet chocolate squares since I was out of chocolate chips, emptied the remains of a bag of peanut butter chips into it and finished off a jar of low-fat natural peanut butter. We'll see how it goes with DH who absolutely abhors anything that is on his "twigs-and-sticks-cereal" list. I'm betting this will go down as easy as the chow-mein noodle version. Yeah for another DH fake-out to get him eating healthier! Thanks!

Mandarin Almond Salad

The ratio of dressing to salad is perfect! The flavors, refreshing and satisfying. Hubby likes his plain old ranch dressing so this isn't for him but this salad simply rocks for everyone else! Made just as the recipe called for. Do not dress this salad early, toss it in the dressing just before serving.

Non-Alcoholic Margarita Punch

Oh my! I found this VERY tart but the kids absolutely loved it! Since sour is in, it is a total hit. I've promised to put it on the kids' "we're having a party" menu for all time.

Bacon and Tomato Cups

These got rave reviews at the Preview at the book fair this morning! I'm passing the link to the recipe along to the teachers! Thanks for a savory, yummy "muffin" alternative! I did make a few changes. I'm a fan of cheddar paired with bacon. I doubled the recipe and used half swiss and half cheddar. I did not use the onion but sprinkled garlic powder on top of each cup (sparingly) before baking. I will definitely make these again (especially since I still have filling leftover and an extra can of biscuits).

Rich Chocolate Frosting

Thanks a Million for posting! Son's birthday order was chocolate cake with chocolate icing. This put the cake over the top and gave me more than enough for a 3-layer round cake with frosting in between each layer. I will definitely keep this recipe in my box for future use.

Blueberry Sour Cream Coffee Cake on a diet

This barely made it through the weekend. It was wonderful! I did make the following changes: 1. I ran out of sugar so used: 3/4 c. granulated sugar + 1 1/4 c. Splenda 2. For the Sour Cream: 6 oz. Plain Greek Yogurt + 2 oz. light sour cream 3. I used UNSALTED butter The only difference is that the cake could have handled an extra 10 minutes in the oven, but it was wonderful anyway! Thanks for sharing!

Banana Banana Bread

I tried this because I wanted a recipe that used lots of banana. This is our new favorite! I used the Splenda Brown Sugar blend and it turned out fine. The kids have requested this over and over. Thanks for a keeper!

Whole Wheat, Oatmeal, and Banana Pancakes

Wonderful! The kids loved them... especially with their requested chocolate chips. What I liked was that I didn't feel so bad adding the choc chips because of the healthy recipe. I didn't have whole wheat flour so I ground extra oats and increased the white flour (50/50) to make up for the 1 c. of whole wheat flour. Thanks for posting! I'm adding this to my permanent file.

Very Versatile Curried Chicken Salad

I made this for a light lunch I hosted today. I added a bit more curry powder and skipped the cranberries and pecans. Instead of regular Mayo, I used Kraft light made with olive oil and squeezed a fresh lime for the lime juice. This salad was served along with a cracker and cheese plate. It made a lovely light lunch and is now awaiting the return of the children from school. I made it in the past with dried cranberries and chopped walnuts. In all this is a very versatile and tasty chicken salad. Thanks for posting! I will definitely use it again!

Thirty Day Friendship Cake

I have searched through countless Friendship Cake recipes to find this one. I received starter for this from a friend 10 years ago and I remember this being the moistest, most delicious cake that I had ever had. I was worried that it would actually taste like the holiday fruitcakes that I really don't like but instead I felt like I was in Hawaii enjoying a tropical delight. Thanks for posting this. The coconutwas a key ingredient that is not included in many recipes. I had to make the starter first this time so now it's off to Mom's group with the final product. They've been waiting 8 weeks for this ... I hope they like it as much as I do!
