Kugeli Comfort Potato Dish

This recipe is a fair amount of work if you slice all of your veggies and shred your potatoes and cheese, and you will have quite a cleanup to do. As I always do with shredded potatoes, I filled my salad spinner with water, put in the potatoes, gave them a good whirl, emptied the water, and then spun them again to get the water out. There is a typo in this recipe which says to bake for “...55 hours” (assuming that should be 55 minutes)...sent a note to AR customer service. I didn’t understand what purpose it served sprinkling on just a little more cheese at the end and then baking for another 5 minutes, so I put it all on when it first went into the oven. I baked for a total of 55 minutes, and it was just a little dry; would start checking at about 45 minutes in the future. No complaints about the taste, it was good, but it’s too much work for a weekday side dish.

Kim's Summer Cucumber Pasta Salad

We love dill cuke salads, and the dressing on this one is very similar to what I typically use. I did use Truvia instead of sugar and fresh dill (twice the amount of dried in the recipe) simply because I had it on hand. I do like the additional texture that the pasta brings to this salad, and I can see adding some chopped red bell pepper for a little color and grilled chicken which would turn this into a nice (and make-ahead) summer main course.

Pie for Breakfast Shake

Used vanilla Greek yogurt and sub'd wheat germ (it worked well) when I couldn't find my flax seed. My berries weren't frozen, so I did add some ice to the blender. Really did taste sort of like strawberry pie, and it also left me feeling full (lots of fiber in this one). Thanks wisweetp, this one will go into my breakfast smoothie rotation, we really liked it.

Savory Summer Squash with Bacon

I spiral cut the squash instead of cutting into bite-size pieces but, otherwise, followed the recipe. Just a really nice side dish loaded with fresh flavors. Delish!

Rum and Raisin Banana Smoothie

This was a breakfast smoothie, so I sub’d rum extract for the rum (too early in the day for booze), and it worked fine. This is surprisingly tasty, and these flavors all partner well with each other. I did add a bunch of ice to it because a frozen banana did not make it slushy at all. For my taste, I will probably add more nutmeg in the future. I drink a lot of smoothies, this is a good one, and must say that this tasted totally different from any that I’ve ever made.

George's Woo Hoo BBQ Sauce

We used this on grilled bone-in chicken breasts, and they were delicious. This had just the right amount of zing, and the lemon really brightened the flavor. Next time, I will cut back on the brown sugar, but I'm finding we're liking things less and less sweet these days, so that's a personal taste preference.

Banana Roll French Toast

This is like a cross between a crepe and french toast, and I love the eye appeal you get with the rolls. I used reduced-fat cream cheese, white bread (didn't have any wheat on hand) and did put a little butter in the skillet along with the oil. The filling is loaded with luscious and creamy banana flavor with a hint of cinnamon and just enough sweetness. A definite remake in this house with nice enough presentation for company brunch. Thanks, Glo, for this wonderful new recipe.

My Chicken Spaghetti

Honestly, I wasn't convinced that the Velveeta cheese on its own would work, but this turned out to be pure creamy, cheesy, mellow goodness. The only liberty I took with the recipe was adding some buttered fresh bread crumbs as a topping, and I'd do that again. Thanks S, you made a Velveeta believer out of me with this recipe...enjoyed!

This was pretty good, but I expected to taste more of the spiced rum. We did add more rum to each drink, nobody was complaining, and the glasses were empty, so I'd say it was a success.

Easy Cherry Tomato Corn Salad

Really enjoyed this for lunch today along with some cheese, crackers, and fresh fruit. I don't think I would make it with anything BUT fresh corn; that crunchiness really is part of what I think makes this salad taste so good. The lime-basil dressing is the perfect complement to these veggies, and that occasional pop of jalapeño wakes you up. Very nice salad cookbookangie.

Fresh Green Bean Salad

This salad's simplicity allows the fresh vegetables to be the star. The recipe didn't say what type vinegar to use, so I used white balsamic and added some fresh dill which always partners well with green beans. I steamed the green beans for 2 mins and 20 seconds in the micro on high which left them perfectly crisp. This was a welcome change for a nice side salad with dinner. This didn't knock-my-socks-off, but I did enjoy it.

Carrot Cake Smoothie

I knew that the spice amounts would be too much for me (personal preference), so I literally cut them in half, and those flavors still were prominent. Cinnamon, allspice, and ginger are very strong spices, so I'd recommend that you start out modestly and then add more if necessary because once they're in there, you can't take them out. I didn't use any frozen fruit, so I did add ice, I like my smoothies thick. This is one of those "outside-the-box" smoothies, and I like the fact that it's not loaded with additional sweeteners, the fruit takes care of that.

Smoked Sausage-Potato Hash

I turned this into a tasty 2-ingredient recipe by substituting Johnsonville® Italian Mild Sausage Links for the smoked sausage and used a bag of frozen potatoes which already had the peppers and onions in them. We gave it a pretty healthy shake of hot sauce to spice it up a bit. This recipe is a candidate for scrambling a couple eggs into it or topping with a poached egg.

My Mother's Swiss Steak

Instead of simmering the meat with water, I added the can of tomatoes and its juice (the recipe doesn’t say whether or not to drain the tomatoes) to infuse the tomato flavor into the steak. I can’t imagine swiss steak without onions, so I eliminated the onion powder and added freshly-sliced onion as well as a few green peas to give it some color. Served with mashed potatoes and green beans with mustard cream sauce and toasted almonds (recipe from this site).

Green Beans With Mustard Cream Sauce and Toasted Almonds

I steamed the fresh green beans in the microwave for 2 min 15 seconds, so they were crisp and vibrant green. I didn’t want the mustard cream sauce to overwhelm the freshness of the green beans, so I ended up drizzling the sauce on the top which is the way I will do it in the future as well. I do have some dijon mustard cream sauce left over because drizzling doesn’t take as much. That’s OK, it went into the fridge and will be warmed up and served over a poached egg for breakfast tomorrow. The dijon flavor in the sauce is subtle and mild, and it allows the flavor of the vegetables to shine through. Very nice side dish with good presentation.

Spicy Doritos® Chicken

Baked this early this morning and then put one humongous chicken breast in the fridge to chill for a luncheon salad. Not only was this tasty, its EASY, and 'll be using this often for summer evening main course salads this year. I didn’t have any whole wheat bread crumbs, so I sub’d panko which worked well and cooked the chicken to 165, so it was perfectly cooked, tender, and moist.

Mango Squares

I had just enough left in a bag of dried mango and cherries to make this recipe, so I left the cherries in. This baked up into a flavorful bar cookie, but if you’re really looking for mango flavor, it's not here. Still very buttery, moist, fruity, and just pretty darn tasty.
