Easy, quick and everything was on hand. I did add a bit more parmesan cheese. The chicken breasts I used where on the large size so I did add to the baking time. Thanks mxDOc!

Steam-Grilled Green Onions

A great side for our meal. A tip for storing green onions, put a small amount of water in a glass, put the roots of the green onion into the water. Cover with a plastic bag and place in the fridge.

Lobster Casserole

I scaled this down for one and used some leftover lobster I had in the freezer. I didn't have heavy cream so I used milk. My last tweak was using bread crumbs. Would make this again.

Unstuffed Cabbage Dinner

Stumbled on this when I was searching of a way to use some cabbage. So glad to say this exceeded my expectations and we will be having this again soon. Only change was making my own dry onion soup mix (4 teaspoons beef bouillon granuals, 8 teaspoons dried onion flakes, 1 teaspoon onion powder and 1/4 teaspoon pepper).

This is a keeper worthy of TEN STARS! I used a store bought graham cracker crust, any would be good. I can see the filling in little cups for a lighter no crust version. Heavenly!

We really liked this, and enjoyed the layer of slight flavor of oregano. I cooked a breast for me and a thigh/leg for DH and served with broccoli. I did use pickled ginger and not fresh root.

Grandma Hasz's Christmas Cutouts

Made this for Faceless Frenzy 2013. I couldn't decide between a sugar cookie and an oatmeal cookie and this one is a perfect combination. I made a half batch and used 1/4 teaspoon lemon juice instead of extract. I also added a bit of lemon zest, more zest will be added next time, a nice surprise for the taste buds! I'll freeze what I don't eat tonight and frost them later. I will make these again. (If you don't want to frost, add a slice of bread to your airtight cookie jar to keep the cookies soft.)

Herbed Cream Cheese With Scallions and Tuna

Made this for the Faceless Frenzy weekend 2013. First let me say that I never thought to add tuna and cream cheese. I went outside my box and found a terrific addition to my lunches! I bet this would go over big at a party on those mini bagels. Bonus points because DH really liked this too! I toasted the bagel.

Exotic Fruit Drink

Made this for the Faceless Frenzy weekend 2013. OMG this is so refreshing! I didn't have cranberry so I used grape juice. DH even liked it. After taking the photo I decided to add a bit of vodka - over the top! Cannot wait for summer to enjoy this on a beach. Thanks Blair.

Brownie Cupcakes

Made this for the Faceless Frenzy weekend 2013. I loved the idea of making brownies in a cupcake liner since the plan is to freeze most of them! I used milk chocolate chips and a small handfull of mini semi-sweet chips. Even though I cut the recipe in half it yielded 12 cupcakes that were great. Another plus is you'll nearly always have the ingredients on hand.
