Ground Beef Shepherd's Pie

General format for the meal is patently plain and to a certain degree is attractive for a quick and uncomplicated meal. After regaling the family with recipe results, I have deduced that with simple additaments, the meal would be enhanced by slight modifications to the potatoes and the meat. The potatoes need more, perhaps butter to liven up the taste. Next, the meat was in need of more spicing which can be accomplished by adding a more powerful assortment of spices. I am certain that sautéing the brown onions with minced shallots, minced garlic, minced green onions, and very finely minced green jalapeno in olive oil, then combining with parsley, oregano, eggs and Italian bread crumbs, all added to the mixtures above before cooking would yield a tighter and more flavorful dish. I give this recipe a 5 star for the simplicity of cooking and the reality of being able to use spices which are usually on hand. Great meal!

Parmesan Sage Pork Chops

I loved adding a new option to cooking pork chops which usually end up losing their moisture along the way. Surprisingly, I used 1" thick Bone in Pork Chops and the results were a tender, flavorful meal. Additionally, if you happen to be a chef that imbibes libations from time to time, you can grate extra lemon zest and contribute part to a Martini Shaker and part to your Martini Glass. You can also use the lemon that was grated for the lemon juice needed for a wonderful, lemon drop Martini. 2/12/2013

Asian Lettuce Wraps

The wraps were excellent but I used a little extra Hoisin Sauce to spice up the taste. The Butter Lettuce gives a nice sweet taste to offset the spicy aspects of the filling.

Chicken Ferocious

The product was satisfactory;however, I am inclined to revise the recipe to reflect no more than 3/4 cup of vinegar and to change the sweetner to granulated white sugar of about 1 cup. You can mix the vinegar, soysauce and sugar together and the sugar will dissolve without heating. Other than that the recipe is intriguing and has plenty of upside. I purchased spring rolls to be added as an accoutrement.

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

5-11-2011 The results of this recipe are very tasty. However, the chef needs to reevaluate the cooking sequence. For example, the menu seems to imply putting the stuffing into the cavity prior to apllication of the egg, flour and crumbs. I switched the sequence on my third and fourth chicken breast putting the egg, flour and crumbs on first, then inserting the feta, bacon mixture. Additionally, I used cooking toothpicks to hold the flaps of chicken together. The meal was exceptional, especially the taters. My wife is German and was raised in North Dakota. She loved the potatoes and is my resident expert on the taste of potatoes. Try the meal, it is great. Just add sweet peas or something else to complete the meal.

Chicken Main Dish with Apsaragus Side Dish

The chicken is excellent. The sauce can be over cooked so make sure that your mate gets home on time. The sauce will cook away if you have to keep it warm too long and frankly, the sauce separates this chicken from the simpler meals. You can add can diced tomatoes with garlic and herbs, etc. or just butter the noodles. I used Linguine noodles for their width and presentation. Using the cajum seasoning on the asparagus is great so long as you don't under coat it with the cajun seasoning. Use a modicum amount of cajum seasoning. The combination of the meal was sensational. The balsamic vinegar makes the chicken sing.

Mushroom Chicken Parmesan

6/28/2010 While cooking this recipe, I chose to add a little Mozzarella Cheese and Slice of Tomato to the top to accompany the Mushrooms. The toppings used during baking engender a succulent, moist piece of chicken that is sensational. I am unsure as to the neccessity of the Whipping Cream but used it nevertheless. I regaled several guests with this sumptuous meal and they raved about it. Thanks for the tip. I would suggest to the author to proffer some additional dishes to round out the meal. For example, I added fettucine alfredo and some sweet green peas as side dishes. Lastly, I would rate the recipe at a 4.5 to a 4.8 rather than what appears on my review above. You can't go wrong with this recipe!!! Roary S. Walsh
