Shrimp and Pineapple Ceviche

Reviewed: Mar. 14, 2013
This is a nice light summer appetizer. I could see serving this in shooters at a late spring/summer get together. I'm a cilantro hater, so I made my usual parsley sub w/no issue. I also chose to forgo the avocado. THANKS, Kiersa!

Mojito Perfecto

Reviewed: Mar. 14, 2013
I've recently discovered I like mojitos, and this is no exception. I used bottled lime juice and regular white rum, per what I had on hand. I also prefer Diet 7up to club soda. CHEERS, Alycia!

Stuffed Portobello Mushroom Caps

Reviewed: Mar. 14, 2013
These were intriguing. I used shrimp as the meat and as surprised at how dry the filling was. It was very much stuffing (think Thanksgiving) consistency, albeit a dry stuffing. I also didn't get much cheese. I DID eat all of my mushroom, but I'm not sure I'd make these again. THANKS for the recipe, rocklightning!

Garlic and Sausage Stuffed Mushrooms

Reviewed: Mar. 14, 2013
We were taken back by the overwhelming tang in these mushrooms. These will not be a repeater at the LTH house.

Patron® Mojito

Reviewed: Mar. 14, 2013
This one's tough to rate because it's hard to drink a Mojito and taste tequila. It's just...weird. However, weird is NOT bad. If you are a tequila fan, this is definately a drink for you. I used bottled lime juice in place of fresh lime and Diet 7up in lieu of club soda. This is a nice cocktail. CHEERS, dudelander!

The Mojito Cocktail

Reviewed: Mar. 12, 2013
Two tablespoons of white sugar? Yes, please :) While this is a bit on the sweet side, I did enjoy it. I can't say that I'll make it again, but I enjoyed it while it lasted. I used bottled lime juice, so I'd imagine fresh would even kick it up a notch. CHEERS, Allrecipes!

It's a bit dry for me, but the tagline really says it all. CHEERS, Ken Williams!

Christmas Cosmo

Reviewed: Mar. 12, 2013
This was a really nice sipping drink. I didn't have fresh limes, so I used bottled lime juice and subbed peach schnapps for triple sec and it was delightful. I sugar rimmed my glass and very much enjoyed the added crunch. No garnishes, here, but "Frosted Cranberries" would make an excellent holiday garnish for this drink. CHEERS, Sheila Parcell Fisher!

Colorful Broccoli Salad

Reviewed: Mar. 12, 2013
This was just ok for us. Being one of the first reviewers, I tried to follow the recipe to a "T", but had to make some adjustments to make it work. The amount of dressing wasn't enough, so I need to make about 1/2 more. I also prefer this w/much less sugar and more vinegar. It's a very basic broccoli salad and easy to adjust to your personal tastes, but as written it's a bit dry and sweet for me. THANKS, 1940's girl!

Slow Cooker Cheesy Mushroom Potatoes

Reviewed: Mar. 12, 2013
I'm always on the look out for new slow cooker recipes and Mr. LTH loves all things potato, so I knew this was right up our alley. I did all of the prep the night before (sliced potatoes and then kept them in cold water in the frig and sauteed the mushrooms) and tossed everything in the crock pot the next morning. I did reduce the cheese by about a cup and had to sub light cream for milk when I realized ours smelled a bit off. It was a nice side, but I'm not sure I'll make it again, simply because Mr. LTH didn't love it ("it's ok") and it's too high calorie, low nutrient to become a staple here. THANKS, Kat!

Long Island Iced Tea Cocktail

Reviewed: Mar. 12, 2013
This was not as smooth as other Long Island recipes I've tried. I added a bit more cola to make it more palatable, but it was still not my favorite (I did manage to finish it, though ;) ). CHEERS, allrecipes!

Shrimp Stir Fry

Reviewed: Mar. 12, 2013
This was just what 3 stars indicates: ok. It was perfectly easy and well balanced, but nothing about it stood out for us. I very much appreciated the ease of preparation; this was on the table in less than 20 minutes. I think this is a good jumping off point to personalize it a bit per your personal tastes. THANKS, damialyon!

Captain's Mojito

Reviewed: Mar. 12, 2013
I like to say "Mo-Jee-Toe", but I don't tend to like drinking them as much as I like saying their name. This recipe intrigued me w/it's use of Captain (R). It didn't disappoint! The only slight modification I made was to use Diet 7-Up in lieu of soda water (though, in thinking about it, perhaps it's not a modification, after all...). I can definately see making this again when we have fresh mint on hand. CHEERS, byrnesette!

Texas Tea II

Reviewed: Mar. 12, 2013
This drink screams spring to me. Yesterday was our first warm day of 2013 and I made this while preparing dinner. It was refreshing and delicious. The only change I made was no Triple Sec because we don't have any. This will be a repeater at our house. I did find I prefer it was a bit more Diet 7-Up. CHEERS, STINKYKG!

Cough Syrup

Reviewed: Mar. 8, 2013
I can definately see nipping on this w/a sore throat. It has a very menthol-y taste. The 8oz glass throws me, though. I feel like I should make in a shaker w/ice, strain into a shot glass, and shoot it. If I were going to make this a drink, I think I'd add some club soda or other bubbles to round it out for sipping. It's interesting, that's for sure. CHEERS (again) DEEJAYDOC!

Indiana Bulldog

Reviewed: Mar. 8, 2013
I have to admit, I was drawn to this recipe because it was "faceless" AND it had such varied reviews. I hate milk. I won't drink it unless it's mixed w/a LOT of Hershey's syrup and ice. After I made this (and I followed the recipe to a "T", even measure the milk and Coke Zero), I didn't even want to try it, as it doesn't really look good. I did try it, and was pleasantly surprised. It tastes kind of like carbonated chocolate milk, with a subtle cola undertone. I really kind of dig it. CHEERS, CHIRP!

Candies

Reviewed: Mar. 6, 2013
It's a shame so many "non-reviews" have skewed the ratings for this drink. As a general rule, I'm not a fan of SoCo...in fact, I bought a "nipper" sized bottle just to make this drink. I'll be hitting the liquor store (we live in PA; we have antiquated liquor laws...) for a regular sized bottle just to make this. The tagline hits the nail on the head. This is a great social sipping drink for someone who wants to sip at a drink, but isn't interested in high alcohol. I used Dr. Pepper 10 and a full nipper bottle (slightly more than a shot) and it was perfect. I didn't notice a distinct alcohol taste and enjoyed the drink. I can see this becoming a nightcap staple in our world....CHEERS, DEEJAYDOC!

Madcat

Reviewed: Mar. 5, 2013
This one didn't work for me. Even though I reduced the vodka to one shot, it still has a very strong, almost medicinal, alcohol taste. We don't have "fruit flavored rum", so I used rum w/a shot of cherry juice and it's still super strong. CHEERS, John Keock!

John G's Caesar Salad Dressing

Reviewed: Mar. 5, 2013
This is really good, but you can't go into it thinking "Caesar" or you will be disappointed. I was looking for Caesar and didn't really get it unless I ate a bite w/Caesar croutons and fresh parm. However, that doesn't mean this isn't a nice dressing. Four stars from me simply because it's quite oily. If I make this again, I'll adjust the EVOO and vinegar to more equal amounts. THANKS for the recipe, John G!

Bowties with Italian Sausage in a Cream Basil Sauce

Reviewed: Mar. 5, 2013
I have to preface this review with a disclaimer (or two): I hate sausage. A lot. As an Allrecipes Brand Ambassador, Johnsonville asked us to give their recipes a try. I was dreading it. I bought all of the ingredients, came home from work, and...poured myself a drink. I considered bagging our dinner plan and eating leftover pizza, instead. However, I decided to make myself get busy in the kitchen and I'm so glad I did. Not only did this come together in LESS than 15 minutes (probably closer to 10), but it was also quite tasty, even for a sausage hater like me. Now, I must admit, I used the wrong Johnsonville sausage because I couldn't locate what the recipe called for in our grocery store (I ended w/a New Orleans links). It wouldn't "decase" for me, so I simply chopped it and continued from there. THANK YOU for dinner, johnsonville!
