About this Cook
I like to eat and I tend to be a picky eater, therefor, I like to cook so I can be in control of what I eat. Thankfully, Mr. LTH eats everything and anything (except sweet potatoes and vinegar).
My favorite things to cook
I'm a very mood dependent cook: what I'm in the mood for dictates what I like to cook. I've found I really enjoy making new "faceless" recipes and adding a face to them.
My cooking triumphs
I consider everything that comes out of our kitchen and people enjoy/eat to be a triumph...
My cooking tragedies
Underbaked cakes + wire racks + oven to "finish cooking" = a very messy oven

Fettuccini con Rinforza e Patata
Mr. LTH has already requested we have this again when we have roast beef; that's high praise! I did tweak the recipe a bit to meet our needs: I used about 1.5 cups of leftover shredded eye round roast beef and white onions. Since the meat was already cooked, I simply sautéed a few minutes in the spices before moving on to the next step. I realized we didn't have Old Bay belatedly, so I subbed a creole seasoning instead (and used a lot more than "4 pinches; probably closer to 2-3 tsps). At the last minute, I realized we had a handful of shredded Italian blend cheese that needed to be used, so I stirred that into the sauce, as well. This came together in less than 15 minutes and was a very satisfying meal. THANKS, for the recipe!

The Popcorn Cake
This was a Mother's Day hit! Our family has already requested it at Christmas. The only changes I made were to use real butter and I used mini baking M&Ms in place of the chocolate chips. My M&Ms melted a bit, so I can only imagine how much uncoated chocolate chips would melt. This came together in no time. The hardest part of making this was finding a bowl large enough to mix it all in. THANKS, for the recipe!

Rye Whiskey Brie
This was just ok for us. I really had expected it to have more flavor, but it was just kind of blah. I used Bulleit Rye whiskey and almonds in place of pecans. I had to bake it longer to get the brie melty and warm. THANKS, for the recipe!
