About this Cook
I like to eat and I tend to be a picky eater, therefor, I like to cook so I can be in control of what I eat. Thankfully, Mr. LTH eats everything and anything (except sweet potatoes and vinegar).
My favorite things to cook
I'm a very mood dependent cook: what I'm in the mood for dictates what I like to cook. I've found I really enjoy making new "faceless" recipes and adding a face to them.

I consider everything that comes out of our kitchen and people enjoy/eat to be a triumph...

Underbaked cakes + wire racks + oven to "finish cooking" = a very messy oven

Wake-Up Casserole - Canadian Bacon
This was a nice easy breakfast casserole; I liked the ease of using frozen hash brown patties. I used real eggs, so I added bell peppers, onions, green chilis, and tomatoes to my eggs (8). This took a bit longer to bake for me. Our guests all enjoyed it and I liked that it was easy to throw together (in a camper, even!). THANKS for the recipe!

American-Style Creamy Greek Dressing
This was ok, but I don't know that I'd make it again. It was easy to throw together in the blender, but it was missing some acid for me. I think some vinegar and/or lemon juice would take this a long way. I served it over hearty lettuce, grape tomatoes, cucumbers, red onion, and feta to 5 other people. No one raved, but it was certainly serviceable. THANKS for the recipe!

Leslie's Salty Grilled Potatoes
These were good and I really l liked the prep method using the foil to rub the potatoes w/butter/salt to keep things a bit neater. I did nuke my potatoes for 6 minutes before grilling to speed up the cooking process (and they still took quite a bit of time, even with most of the time directly in the hot coals). I skipped the black pepper per personal preference and chose not to use the optional Italian seasoning. THANKS for the recipe!
