Banana Crumb Muffins Gluten Free

Very moist and flavorful. My version had a few modifications: I used regular butter instead of soy margarine and coconut flour instead of almond (didn't have on hand). Approx. 1/2 way thru, strudel topping started to burn, so turned oven temp down to 350. FYI: ingredient list states 1 Tbsp almond flour for topping, however, in instructions it states 2 Tbsp. A tad confusing.. I used 2 and seemed to work fine. And serving size should be 10 not 12 (since it makes 10 very delicious muffins)

Yummy Sweet Potato Casserole

This was made by friends who hosted Thanksgiving and it is VERY yummy! To accommodate special dietary restriction (Gluten Intolerance) they substituted gluten free flour instead of all purpose and don't think it made taste or texture any different. I tend to be fairly picky when it comes to sweet potato casseroles, but this recipe has been saved so that it can be made in our house soon!

Easy Italian Sausage Lasagna

It was alright, I've had better lasagna though. I used turkey over sausage (just due to preference) and rice noodles due to gluten intolerance. Even with additional Italian seasoning it still seemed to be missing something. Somewhat bland.. maybe a spicier or more flavorful sauce would have helped.

Simple Delicious Pasta Sauce

Very easy and simple. I love that the ingredients are items I typically have in the cupboard. Other than wishing I would have used the small diced tomatoes instead of the chunky ones, recipe was great. Per other reviews, I added Italian Seasoning and Oregano for additional flavor - glad I did.

Easy Pizza Sauce I

Very tasty and and it was very simple to make. Made for a Pizza party and friends could not believe it had been 'homemade'. They all raved about how good it tasted.

Pumpkin Bars III

Very good! I used Organic Pumpkin Puree (from World Market) instead which is a little less thick than Libby's. This seems to have helped to make a little more "bar" like instead of cake like.

Peppermint Brittle

I used mixture of white chips (Nestle) and candy melts. Tried adding layer of dark chocolate as others had suggested and didn't work for me - didn't meld together. Used as part of Christmas goodies for co-workers and told by many it was very good.

Slow Cooker Cranberry Roast

This is amazing! Just sweet enough with the cranberries without being too much, roast was so tender and delicious. I chose not to make the gravy and glad I didn't, I don't think it needs it! There was 'juice' from the onion mix/cranberries at the bottom that worked perfectly with the roast.

Pumpkin Turkey Chili

Very good, with a few modifications. After reading the other reviews regarding blandness, I used red pepper (instead of yellow), Zesty diced tomatoes (instead of regular) and extra chili pepper. I also added a little water since it seemed too thick otherwise.

Classic Peanut Butter Cookies

This cookie has make the top of my list (and I'm not even that big of fan of PB cookies!) I made a few adjustments, mostly because I realized a little too late I didn't have enough of 2 ingredients. Per suggestion of other reviewers, I added extra 1/4 Cup flour. Also, I only had 1/4 C brown sugar so rest is Brown Sugar Splenda blend (you really can't tell) and had a little bit of Peanut Butter with Honey (made by Skippy) so used that as my "extra" peanut butter. Apparently, I made them TOO small as I got almost 10 dozen from doubled batch. And mine took about 10-12 minutes.

To Die For Blueberry Muffins

Best blueberry muffin recipe EVER! made for my co-workers and they keep asking me to make again stating it was best muffins they've ever had. I *barely* got 8 muffins out of it (filled up to top) and had way more streusel topping than necessary (probably could have doubled the muffins and still had enough streusel). Delicious and very moist!

The Best Rolled Sugar Cookies
