My Mammaw used to make Pineapple Upside Down Cakes particularly for me, it was something we had. And every year for the holidays my mother's siblings made a pretty mean oyster stuffing/dressing. I absolutely love oysters and it's probably the only thing I miss about that side of the family;)

Sharese's Spaghetti Salad
I am not usually a fan of Italian dressing on my dishes because it takes over and every bite basically tastes like the dressing. But in this case I didn't mind too much. I actually prepared this dish for my son's little league cookout but unfortunately we brought it back home (only a few people ate from it). I assumed the spaghetti would have really gotten the kids attention. Who knows. But my family liked it and it didn't go to waste. Thanks.

Twice Baked Mashed Potatoes
My family gobbled the entire 9x13 dish of these in one evening (is that a good thing? lol) Needless to say, they were delicious. I admit I added broccoli to ours, we always do when making loaded potatoes. Thanks for sharing. Next time I will consider caramelizing some onions first rather than just adding them raw.

Cheesy Broccoli Chicken Casserole
As I was preparing this recipe I realized I did not have the herb & butter rice packs but I had the herb & butter noodles instead. I went ahead and finished making the recipe and it came out great. At least that is what "I" thought. The kids didn't particularly dig the fact everything was mashed together, they would rather have the ingredients separately on their plates. It took about 45 minutes to prepare and an hour in the oven.
