McCormick® White Chicken Chili

Yeah, this is GREAT!! Added a can of rotel tomatoes, 1/2 chopped onion, about 1/2 cup chopped red & green peppers and 1/2 can diced green chilies. And did not add the water, the juice from the beans & tomatoes made it just right. Served with cheese on top. Made cornbread with this, a really good dinner!

Pumpkin Gingerbread

This is delicious! I always read a number of the reviews before I try a new recipe, to see how others may have tweaked it to get it to the next level, so, this is what I did differently: I used 2 cups of sugar. I baked a 9 x 7 loaf at 325 for about 80 - 90 minutes and it came out perfectly, as did the 3 smaller ones baked for about 40 - 50 minutes. I followed the rest of the recipe, but I think the amount of spices could easily be increased by maybe 50%. Just a great way to start off the fall. I plan on using this recipe again - soon!

Restaurant-Style Chicken Scampi

I've been making this for many years, with just a few minor changes: I add a few sliced mushrooms and some fresh basil; I just sauté the chicken, seasoned with a little salt and pepper, in evoo without the flour; mix together the cooked chicken, cooked vegies and cooked pasta (I usually use penne). I don't see any need to add the pasta water or chicken broth. Rather than jarred sauce I make my own, a very good one to try is Quick and Easy Alfredo Sauce on AR submitted by Dawn Carter. I don't use the fresh parsley, just a couple of shakes of Italian seasoning. This turns out really good; add a salad and voila! Dinner is served!

Tuna Noodle Casserole from Scratch

This is divine comfort food! Based on other reviews I tweaked it ever so slightly: used PAM rather than butter to grease the pan, added about an ounce of cream cheese to the sauce and added about 1/2 cup cheddar cheese to the sauce. I also made about 50% more, just eyeballing the ingredients until it looked about right. This completely filled an 11 x 13 pan and 4 people totally devoured this, leaving *no* leftovers for today! Yeah probably a bit off the charts for fat and calories, etc., so this will not be a weekly meal, but I will definitely be making this again.

Buckeye Balls

I have been making these for Christmas since I was a student at Ohio State many, many years ago. Right after Thanksgiving, my kids start bugging me: "Mom! When are we gonna make the BUCKEYES?!?!" They are quite the tradition in our household because they are just so sinfully delicious!

Quinoa Broccoli Casserole

Excellent recipe! Made this pretty close to as written, just a couple of sustitutions based on what I had in the pantry and we all enjoyed it very much. I can see that this will lend itself to variations in the future. Thanks for the post!

Corn Casserole III

Wow. I cut back on the sour cream and butter by about half and it was still so dense and thick, I baked it probably a half hour longer than stated and it was still not done in the middle. I think my expectations were for something like a super glorified cornbread and this was much more mushy. The taste was really good, but I think I'll try this again with a lot less butter and sour cream to get the texture I was expecting. It did taste really really good, though!

Eggnog French Toast

I made this for Christmas morning and everyone really liked it! I read through a lot of the reviews and did adopt several alterations: I used 4 eggs and about 1 cup of eggnog, used nutmeg instead of pumpkin pie spice. Like several others, I made it the night before: put the bread in a 9 x 12 pan and poured the egg mixture over all. Refrigerated overnight, covered in foil, then put in a 375 oven for about 35 min, til nicely browned. So easy and delicious; I can see this becoming a new Christmas morning tradition!

Chef John's Italian Meatballs

These tasted really good and were super easy to make. Just a couple of things: I think next time I'll use maybe a 1/3 cup of milk as they were almost too juicy to form into balls. Also, next time I will try baking them with a rack in the pan as they really did make a lot of grease and I think they would taste better without sitting in it. Third, I wish they would have browned up a little better. I even kept them in the oven for a few more mintutes at 450 and that didn't help. But, again, the best tasting meatballs I've ever made. Nothing wrong with the recipe as written, just personal preference, a five star recipe for sure!

Avocado, Tomato and Mango Salsa

I've made this few times now and everyone who tries it agrees it is fantastic. A couple of adjustments: add a chopped papaya, half a can of black beans, half a can of corn, and I only use maybe a fourth of chopped jalapeno because I'm a wimp, and this is the best salsa I've ever made. Thanks for the post!

Double Tomato Bruschetta

I have made this many times over the past couple of years and it is always a hit. The only changes I've made are to use only 4-5 romas and I like the one reviewers idea of using sliced mozzarella on top; it does help to keep it all from sliding off. Tonight I used portobello mushrooms instead of the bread: just baked them rubbed with a little EVOO for about 5 minutes (at 425), added the bruschetta and baked 5 more minutes, topped with mozzarella and baked just til the the cheese melted. Delicioso!!!

Award Winning Soft Chocolate Chip Cookies

This recipe used to be on the Jello vanilla pudding box years ago (I still have it taped to the inside of one of my cabinet doors). I just made these again yesterday for the first time in many many moons and they are as good as ever. This is the gold standard of chocolate chip cookies, imho. Two of these fresh out of the oven with a big tall glass of ice cold milk, it just doesn't get any better than this!

Sweet Dinner Rolls

Wellllll, not sure what went wrong, but these did not turn out for me at all and I was soooo looking forward to these after reading all the rave reviews. I read a lot of the reviews and made a few alterations such as not forming into crescents, but just made half into the cloverleaf rolls and half into rolls just dropped onto a cookie sheet. I did not deviate at all from the ingredients or the method of using the dough cycle on my bread machine. The dough was still really dense when I put them in the oven and they did not rise at all while baking. I do want to try these again, maybe I should try new yeast. So, as disappointing as this has been, I'm still giving this 4.5 stars because I'm 99% sure the result was due to operator error.

Cha Cha's White Chicken Chili

Really good! Made a couple of changes: used about a pound of ground chicken rather than the chopped; used all green chilies (NO jalapeno for this wimp!); added a can of chopped tomatoes and a can of corn; used one can of chicken broth (because we like it thicker); just a pinch of cayenne (see disclaimer above); pureed one can of beans as others done; and left out the cheese. Will defintely make this again!

Oriental Chicken Salad

Very good! Made just a couple of changes: left out the peas, used toasted almonds instead of cashews and used romaine lettuce instead of iceberg. Also, as I was cooking the chicken, I added some of the sauce to the frying pan. For the dressing, I didn't use quite that much sugar, about a quarter cup and that was sweet enough for us. Like others have stated, it's probably best to add the dressing right before you serve it; that way everything stays crisp. I'll be making this again!

Four Cheese Margherita Pizza

Just fantastic! Our family ritual for many years was to order pizza every Friday night so nobody had to cook at the end of the week. Needless to say, we all got more than a little burned out on pizza. Sooo, when I told hubs I was making pizza for dinner, he groaned. But this is so good, even he liked it. Didn't change a thing. Excellant!!

Sausage Egg Muffins

This was ok. I added some shredded colby cheese and I used half bacon and half sausage (because I didn't have much of either). I think it would be better to use maybe a sharp cheddar cheese and to use a whole can of the green chilies; it was just a little bland. And also I would use the paper liners for the muffin cups - clean up was a bear!!

Quick and Easy Alfredo Sauce

I was making a recipe of shrimp, fettucini and peppers and that called for a jar of alfredo sauce; hate that stuff, so I decided to try this recipe; never attempted alfredo sauce before: this was just magnificent! Very easy, full of flavor, made it just the way it was written; I will use this recipe again & again. Try it , you'll love it!
