Wedding Cake Frosting

I got a mushy soup when I made it. I had to almost double the sugar to get it to have any thickness at all!

Four Egg Yellow Cake

Just pulled them out of the oven! I used butter instead of shortening and increased the flour to 3 cups since it was very "liquidy." I also used 1 Tablespoon of Baking Powder instead of 3 teaspoons. That's a joke - 3 teaspoons IS one tablespoon! Lol! Anyway, the batter tasted heavenly. They rose well and baked up with a nice firm crumb. Nothing at all resembling corn bread! They had a larger crumb, not a fine one, so I think that may be where people are getting the cornbread thing from. They tasted wonderful! My friend was here when I pulled the out of the oven and he suggested more butter. Next time I will put a teaspoon of butter flavoring in them to see if that makes a difference. I was going for more of a butter cake than a yellow cake though so that's why I was thinking more butter flavor. They held up well to being filled with ganache and I think it is a nice, basic, versatile cake recipe that I will add to my arsenal for sure! I see it as a perfect blank canvas to make my own variations with - a good, solid contender!

Aunt Teen's Creamy Chocolate Fudge

OK I love this recipe. It is super creamy and melts in your mouth. It almost has the consistency of very soft caramels! I adjusted the recipe based on other peoples recommendations by using 1 tablespoon butter instead of 1/4 cup. I cooked it for 7 minutes instead of 5. I used melted marshmallows instead of marshmallow fluff because it was all I had. I am going to try it with the fluff tomorrow when I can get to the store - I will update this review then! My son said he thought the vanilla was a bit strong but I use real vanilla and not the imitation so that may have been why. I will cut it to 1/2 teaspoon and see if that helps. Personally though I like the vanilla flavor! One suggestion - have your pan ready as this stuff sets up fast!

Dark Chocolate Caramel Panna Cotta

Chocolate was a bit bitter and set my teeth on edge. Caramel was way too sweet. I ended up giving it to my son. He eats sugar right out of the sugar bowl.

Sweet Potato Bread

Just wonderful! I didnt have orange peel so I used 1/2 teaspoon organic orange extract. I didnt have applesauce so I added another 1/2 cup of sweet potatoes instead. I only had 1/2 cup of walnuts left so that is all I put in. It came out wonderful! I was afraid the spices mayhave been too much but they were wonderfully subtle yet gave it a real depth of flavor. As others have said, the flavor gets better the next day! Freezes well. I didnt think it was too sweet but hten again I was expecting a sweet spicy bread, perhaps those not used to the spice are expecting a sweeter sugary loaf. I really enjoyed the flavor of the spices!

Old-Fashioned Coconut Pie

Old-Fashioned Strawberry Shortcake

I was a bit worried when I saw how dry the dough was so I doubled the cream. it still cam out dry. I used heavy whipping cream cause that was what I had on hand. I also only used 1 cup sugar for three quarts of berries - came out plenty sweet! I doubled the recipe for the cake and tripled the berries. I used fresh whipped cream. It was pretty good. next time I may add even more liquid as it was really crumbly. Needed a little more liquid to hold it together. perhaps next time I will take everyones advice and add some sour cream too!

Beef Enchiladas II

As written it is really more like a 3 1/2 only because it is pretty bland. I changed a few things obviously. first there were no seasonings so I added salt pepper and garlic powder. I used corn tortillas because I couldnt have flour. I mixed a carton of sour cream with a small can of green chilis and spooned it into the enchiladas with a scoop of the beef mixture. i also put a jar of picante sauce on top for added flavor. They were wonderful!

Restaurant-Style Hashbrown Casserole

A real favorite at our house and restaurant! I added a few more spices (salt pepper garlic powder)and make sure I melt a bit of shredded cheddar on top when I serve it - otherwise it is a keeper just as it is!

Dumplings

Great recipe! I added a bit more salt because I felt it needed it. Start at 1 teaspoon and adjust up according to your taste. I found that bigger spoonfuls (like a tea spoon) made a good size. If you make them too small they get a bit gooey on the outside and doughy on the inside. A bigger dollop gives them room to fluff up inside. They are wonderful fluffy! I didnt cover them but rather flipped them over because my chicken and dumplings boiled over (twice!) when I covered them to simmer. Next time I will try adding complimentary spices like fresh parsely and make them all the big fluffy size!

Easy Meatloaf

Great basic recipe! I jazz it up with other additions at times like chopped mushrooms, green pepper, jalapenos or bacon. Depends on who I am serving it to. i love the sauce on top! five stars for the sauce, 4 stars for the meatloaf! A keeper either way though!

Bob's Awesome Lasagna

A nice basic lasagna recipe. I did change a few things. I doubled the recipe. I added a container of ricotta cheese and some parmesan to the cheese mixture along with two eggs as a binder. I used my two new lasagna pans (They have three long wells the shape of a lasagna noodle to make three long individual lasagnas - I LOVE THEM!) and it made two full pans three thick layers deep. I also tripled the sauce (so three times the sauce but a double batch of everything else) it called for and added a few small bay leaves as it simmered. Bay just does something special for italian food (and chicken too). I was able to freeze several of the mini lasagnas for later so this was an awesome way to make six lasagnas and have some left over for the freezer!

Creamy Chicken and Wild Rice Soup

I was a bit skeptical about a creamy soup with rice in it but this was wonderful! The only thing I added was a bay leaf while cooking. I just love what the taste of bay does to chicken in soups. As written it is still five stars!

Fluffy Biscuit Muffins

This is my new go-to biscuit recipe!! Fast easy - wonderful! I doubled the recipe and rolled them out on a floured surface and used a 2" biscuit cutter it made about 12 biscuits. They puffed up really high! I served them with sausage gravy and they were wonderful. The only thing I would do different is add about 1/2 teaspoon of salt to the mix - but other than that it is my new favorite!!

Double Layer Pumpkin Cheesecake

I made these in tart form using texas sized muffin tins - what a hit! I used the Ruth's Grandma's Pie Crust recipe for the crust. People were coming back for seconds and thirds! Next time the only thing I will do is make more filling - the filling puffed and then fell a bit when it cooked - I thought it would stay a bit higher than it did. Taste was awesome though!

Uncooked Banana Pudding

May all time favorite recipe! I added more banans because people said it was a bit skimpy on them. I also added more cookies - I lined the bottom of the pan and the top too! This is a mega keeper - so light and fluffy it will make you eyes roll back in your head!

Salmon with Creamy Dill Sauce

Salmon was good - dill sauce was a bit so so. Not what I expected. I used fresh dill and it just didnt have a very deep flavor profile - sort of one note. But the salmon part was excellent!

Sweet and Sour Chicken I

A-MAY-ZING! Tasted JUST LIKE the stuff from our local chinese restaurant! I added red food coloring to the sauce and it was a dead ringer too! I will be making this at home instead of ordering takeout from now on!
