Slow Cooker Pulled Pork

I didn't think the root beer added much to this recipe, and I didn't think a tenderloin was a good meat selection. Reading the other reviews, a lot of people say "this is a great recipe, but I had to change x, y, z." Me too, which makes me think it's not a great recipe.

Chicken Enchilada Foldovers

I just saw this and thought I'd try it for a quick lunch using some leftover chicken - I love the simplicity of the ingredients and preparation, and it was a perfect lunch solution. I chopped and sauteed some white onions while prepping the pizza dough, and added them to the cheese - just like our local Mexican restaurant does with their enchiladas.

BBQ Pork Salad with Summer Fruits and Honey Balsamic Vinaigrette

This is just a "salad" recipe. I figured I would try it anyway (using a family recipe for porkchops) but I found the ingredient list unnecessarily long, the flavors unbalanced, and the overall effect less than impressive.

Creamy Parmesan Mashed Potatoes

This recipe was easy to double and *perfect* for a work luncheon. They turn out so creamy! My only suggestion is to watch the pot carefully if you double the recipe to avoid burned skins once the chicken stock starts to boil down. I put fresh-grated Parmesan and a pinch of italian herbs on top prior to service. All in all, a wonderful recipe!
