Soft Chocolate Cookies

These were okay - I seem to have a problem with cookies falling flat no matter what I do and this was no exception. Easy to play with - some i made exactly as directed; others, I added coconut to, some with mini-m&m candies, some with toffee chips - all were nice. Nothing knock your socks off, but a good staple to have for when the grandkids come knocking.

Peach Cobbler

This is more like a cake floating atop a bed of peaches than what I could call a cobbler, but hey - that's just a regional variation type thing I guess. This will be my go to recipe for those spur of the moment oh my goodness I have to get a quick dessert on the table type things (which I have a LOT). Do use a large can of peaches, keep liquid the same, cut butter in half, and bake in a 9x9" pan (8x8 too small for amount of peaches). Mine (in an 8x8 pan) took 33" to cook and was edible, was still a little to underdone for my tastes, but husband loved. I think simply increasing size of pan to the 9x9 will fix that. As good as I remembered. I increased water to 1 1/2 c to be on the safe side; probably could have stuck with 1 1/4th. .... Nahhh - stay with 1 1/2

Ground Beef and Rice with Cheese

It was cleanout the fridge day and low and behold, I had leftover brown rice, ground bef, and tomato soup to use up. Halved recipe (except rice - ended up using about 3 cups cooked) - I was fully prepared with standby dinner as I simply didn't think this was going to work. But it was GREAT! Used cheddar cheese instead of processed, 1 can of soup, and 1T of chili powder. I truly enjoyed. Tasted a bit like a tamale pie dish.

Deluxe Corned Beef Hash

The only hash I ever had as a child was the canned type (gags). This was an entirely new experience and one that I absolutely loved. Fantastic. Only change was that I used left over potatoes we had boiled when making the original Corned Beef & Cabbage meal. Served with the obligatory fried egg. Yummmmmmm!

Old-Fashioned Vanilla Pudding

Delicious! I was very careful tempering my egg, but apparently not careful enough as I could taste a few little lumps here and there. Note to self to run through a seive next time just as a precaution. Light, creamy with deep vanilla flavor. Only change was to drop butter to about half called for.

Candy Corn Butterfingers

I was literally gagging as I struggled to incorporate the peanut butter into the melted candy (it reminded me of something my dog threw up the night before) and I spent the entire time thinking to myself "what a waste - these'll never work". But I persevered (yippie!) and simply could NOT believe how well these turned out. I made a half batch using creamy peanut butter and came out with 24 "fun sized" little candies that taste almost like the real thing. My only concern was that they seemed a little oily to me, so perhaps next time I'd scale back on the peanut butter (?) or something - haven't quite figured it out yet - could've just been my peanut butter. In any event, outstanding recipe - will definately made again. Thank you!.

Philly Cheesesteak Sandwich with Garlic Mayo

Apple Squares

5* for taste, 5* for ease of preparation, and 5* for absolute yummieness. I had these puppies whipped up in 5 minutes and out of the oven in 28". 3 minutes later they were gone. I mean scarfed. Had to change up just a bit by changing sugar to Splenda (and cut down to about 1/4 cup eyeballed), and upped apple to 1 cup. I was also out of butter and forced to use margarine, but incredibly that worked out fine as well. I lined our pan with parchment paper and had no problems with them staying together. A top notch recipe. My family and I thank you!

Ina's Cream Cheese Frosting

I don't have a lot of experience with cream cheese frostings - this is probably my first, actually. It was good - great with the coconut cupcakes I made as a matter of fact - but I guess I was expecting more of a *cream cheesy* taste. This was light, creamy, but sweeter than I expected. I think next time I'll probably increase the amount of cream cheese a bit. Half a batch covered 12 cupcakes.

Coconut Cupcakes

OMG, these were fantastic. At first, I wasn't sure as I didn't like the way the top of cupcake looked (kindy dry and chewy), but the cupcake itself if ridicously light and moist. Perfect coconut flavor - not too much, not too little. I halved recipe using 3 eggs (5 1/4oz) and came out with exactly 12 cupcakes (only expecting 9). Can't wait to frost...UPDATE: Frosted with Ina's Cream Cheese Frosting and dusted with additional coconut, then chilled. Yuuuummmm.

Quick Creamy Chicken and Noodles

Not only was my hubby suffering from a toothache, but we were both miserable with mild colds. Something quick, simple, easy on tthe mouth, and comforting was needed and this seemed to fit the bill. I used leftover turkey, added just a splash more liquid and Cream/Chicken soup. It was fast, filling, and very very comforting. Served with peas and homemade bread. Perfect. Thanks so much for recipe.

Jamie's Cranberry Spinach Salad

When I first made this, I wasn't quite sure about it; but in retrospect, i believe the flavors are simply so stunning you have to be careful what you eat it with. In otherwords, as a side dish at a BBQ, not so impressive; As a main course by itself or with a very mild flavored meat such as chicken or fish, this works well. Made as directed with only change being the addition of about a 1/4 cup of dried cherries as I ran out of dried cranberries and having to use smoked almonds (which I think really enhanced the flavors and balanced out the sweetness of the dressing). Will make again :)

Chocolate Muffins

Absolutely wonderful. Grandkids and adults alike devoured. I did (as so many others suggested) increase cocoa to 3/4 cup and decreased our to 2 1/4 cup. I also added a tsp of coffee extact to enhance flavor a bit Fantastic. Made with both chocolate and vanilla chips.

Old Fashioned Onion Rings

Have a huge bag of onions I'm slowing working my way through and decided to try to make onions rings for the freezer (will update once we try *frozen* rings tonight). I did test these, however, and was fairly pleased. Personally, I guess I'm a batter ring gal, but difficult to freeze those. For the coating, i thought was *okay* - I did decide after tasting to add to the breadcrumbs and turned it into a 50/50 flour/breadcrumb ratio. This seemed to give them a little more *umphh* in the coating dept. Thanks so much for recipe - will enjoy playing with it. UPDATE: just fried up a batch of *frozen* rings and they were fanTAStic! We did prefer the ones I had added additional flour to, so keeping at a 4* rating, but for anyone looking to make homemade frozen onion rings, these work great! UPDATE X2: Tried baking frozen rings - ehhh. Not so good. Deep frying definatly a should do.

Oatmeal Waffles

5* for ease of preparation; 4* for taste; 3* for consistency - which may probably just be something you have to get used to. We used a belgium waffle iron which made them thicker, so perhaps that's a contributing factor to the texture thing as well. As others have mentioned, they do have an 'oatmeal cookie' type of taste. Only change was to add splash of vanilla. While these weren't knock your socks off great, they are *good*. For those trying to incorporate more fiber or oats into their daily menu, I'd highly recommend.

Marinated Pork Tenderloin

This was good. Cut in half as just hubby & I and marinated 2 loin chops we were planning to grill. Only marinated for about 2 hrs, but chops were small and gave it great flavor. I did as others suggested and boiled marinated with water & cornstarch - - - didn't go well with the rest of our meal, but would be great over rice (more Asian flavored than I anticipated). Good recipe - will make again.
