Coconut Shrimp I

UPDATE: Made again with sweetened coconut and I felt it made a HUGE difference. So much yummier. Definitely use sweetened coconut if you want to replicate the coconut shrimp served in restaurants. ***** I made the recipe pretty much as written, and my husband and I were both, just, well, OK with it. They were good, not great. I did use unsweetened coconut, I wonder if that is where the difference was (the recipe doesn't specify and I used what was open in my pantry). I wonder if a little sugar added would have made a difference, to get a bit of carmelization that might have otherwise happened.... For dipping sauce, I liked the orange marmalade concoction idea but alas, we don't have any. So I improvised and used up a ton of leftover Chinese food sauce packets, made a sauce with a ratio of 8 packets duck sauce, 2 packets mustard, and 1 packet soy and it was really really yummy!!

Spicy Refrigerator Dill Pickles

I made a couple tweaks (added onion chunks and sliced jalapeno peppers, and some fresh parsley & thyme) but these are really, really good!!! I only made these because I was gifted with 6 cukes from a neighbor's garden, and we don't really eat them. Now I'm considering growing cukes next year just to make more of these!

Blueberry Cream Muffins

Pretty good! Not the best muffins I've ever had but definitely satisfactory. I made them with plain full-fat yogurt instead of the sour cream, which perhaps made a bit of difference but I find that yogurt subs for sour cream in recipes pretty well. I think they just needed something, maybe a little cinnamon or brown sugar? Regardless, they fit the bill for using up both some blueberries and yogurt that had hung out in my fridge a bit too long for fresh eating.

Sweet Potato Souffle III

Easy Mashed Potato and Roasted Vegetable Enchiladas

This was OK. If I were to make it again I'd want it to be less heavy on mashed potatoes, and I'd leave room for a lot more cheese in each enchilada.

Shepherd's Pie

I made some changes but I'm sure the original would still be awesome. I chopped up some pork I had and used that instead of the ground beef, added more veggies, and used cream of chicken soup because it's all I had. It was so yummy!

Peanut Butter Cookies VII

I found these to be perfectly acceptable peanut butter cookies. Not the absolute best I've ever had, but I was looking for a dairy-free recipe and this fit the bill. The cookies came out chewy and good, and I didn't have any of the moisture problems that seemed to plague some other reviewers.

Pasta with Pork and Apple Sauce

This was interesting. I used the recipe simply because I had pork chops, apples, and broccoli to use up. I used a can of tomato sauce in lieu of the sundried tomatoes. I'm not sure I'd go out of my way to make this again but given having the same ingredients on hand I'd probably make it again.

Chicken Thigh and Dumpling Stew

Oh, this is really good. I made a couple minor tweaks... I just mix the bacon right in, I skip the heavy cream entirely, and use a larger can of corn. I find that it never takes the 10 minutes the recipe says it should take for the dumplings to be done -- it's always a minimum of 20 minutes, often more. But that's OK, it's worth the wait.

Slow Cooker Chicken and Dumplings

I love this recipe!! It's so good, and something different to do with chicken. And it's easy to mix it up... use different types of soup (I like to substitute one can cream or celery or one can cream of mushroom for one of the cream of chickens) and to add veggies too. I usually also add a little sage or thyme for some added flavor.

Chocolate Chip Banana Bread II

This banana bread was very, very yummy! I made one loaf and it was done cooking in the minimum time called in the recipe. I trimmed it down a bit by using 1/2 Splenda and 1/2 sugar, and using some whole wheat white flour and it didn't matter, it was incredibly good.
