Spaghetti with Broccoli and Chicken

This was an excellent base for a healthy one-dish meal. I sautéed my chicken in a bit of olive oil with minced garlic. If you aren't generous with spices this dish may be bland. After cubing chicken, I added cooked broccoli, chopped onion, and a cup of chicken broth to the pan and simmered while the pasta was cooking. Seasoned to taste, tossed with pasta and added freshly grated Parmesan cheese before serving. Hubby gave this his seal of approval when he said to "put it in the book." Thanks for sharing!

Spicy Garlic Lime Chicken

Looking for a quick dish to throw together on a busy weeknight, I happened to find this gem of a recipe. I added a bit of crushed red pepper to the spices and a bit of chicken broth while sautéing per other reviews. My husband raved over this. Placed the chicken over a rice dish (in pyrex) I threw together and poured the sauce over everything. Baked at 350 for 15 minutes. Thank you so much for this recipe C.Perez!

Gary's Stuffed Mushrooms

These were great, but I changed things up a bit. First of all, made as written, the taste of stuffing would be overwhelming. I should have cut the amount of stovetop down to half or 2/3 at least. Cut cream cheese in half and used three cans of chunk crabmeat, which I think was perfect. I only used the butter in the stovetop and to saute the garlic. Subbed chicken broth in the baking dish and sprayed some butter spray on the mushrooms before baking and it worked well without the extra fat. Thanks for a great base recipe!

Scalloped Potatoes and Pork Chops

This was so good! I scaled it down to 3 servings as it's just my fiancé and I and it was the perfect amount. Luckily I had read the reviews prior to making this so I microwaved my potatoes for ten minutes, then mixed the cheese and onion in with them before putting them in the baking dish. I added the milk, then put in only 1 tbsp margarine before placing the chops, which I seasoned, on top. Finally, i added a little bit more milk over the chops, covered with foil and popped in the oven. After 30 minutes, I removed the foil and left in for the remaining 30 minutes. The potatoes were perfect and the pork chops were great. My fiancé was very happy with this dish and told me to add it to "the book"! Thank you so much for sharing!

Chicken a la King I

I was looking for a chicken a la king recipe because my fiance likes it and I stumbled upon this. I changed it up a bit and omitted the green pepper and pimento, subbing frozen mixed veggies and using fresh mushrooms and adding a chopped onion. I used chicken broth instead of water and threw in some extra spices to give it some more flavor but it was still a bit bland. Anyway, it was still yummy over fresh biscuits!

Slow-Cooker Corned Beef and Cabbage

This was awesome! I followed a lot of other reviewers' advice and added the veggies later. Used beer and beef broth and tweaked a bit to my taste and it was delicious. My Irish boyfriend loved it! Thanks so much for sharing what will be a staple holiday recipe in our home!

Honey Glazed Ham

I needed to make something fairly easy for dinner for my boyfriend who had been eating out due to me being sick for two days. I decided to use a little 1.5 lb prepared ham and needed to find some kind of way to prepare it without using pineapple because I didn't have any and was in no condition to go to the store. Anyway, changes I made were scaling down ingredients for our little ham, using crushed cloves for ease of preparation, and following suggestions of brown sugar instead of corn syrup. Neither of us really love ham, but this was great; moist and delicious! Thank you so much for sharing! This is definitely going to be my ham recipe from now on!

Pleasant Pork Chops

This was delicious! Thank you so much for sharing the recipe, Clyde! It is definitely going to be in my rotation. I made a few minor changes; sauteed the onions and 1 tbsp minced garlic in margarine then browned the pork chops (seasoned with garlic powder and pepper) on each side before adding 1 cup chicken stock and covering. I let everything simmer in the chicken stock for an hour before removing the chops to add the fat-free sour cream, paprika, pepper, a touch of garlic powder, a bit of crushed rosemary, and Old Bay as I didn't have Bay leaves. After mixing the sauce well, I put the chops back in the skillet and let simmer in the sauce while I mashed my cauliflower and prepared the veggies. My boyfriend came home and said that it smelled great, and upon taking one bite said, "you can definitely make this again! I'm impressed with this dish." Trust me, I can't wait to make it again, because it's healthy and delicious!

Campbell's® Easy Chicken and Cheese Enchiladas

This was quick, easy and delicious! I didn't have any chili powder so I added half a packet of taco seasoning to the mixture. As my boyfriend likes things hotter, I threw in some diced chilies for extra heat and poured some enchilada sauce in the baking dish before putting them in, and then covered with more enchilada sauce. With about 5 minutes left to bake, I topped with a Mexican blend of cheeses. We both loved it! Thanks for a great recipe!

Applesauce Pork Loin

Needing something healthy and quick for dinner, this worked out very well. I scaled it down using just one pork tenderloin as there are only two of us and that was the perfect amount. I didn't sear it in oil, just used Pam, and used a bit of cinnamon in the sauce. I didn't have any fresh rosemary so I just used crushed but it still tasted great. I poured about a cup of apple cider into the baking dish before placing the tenderloin in and then covered with the sauce. It came out moist and the sauce thickened to the tenderloin perfectly. Thank you for this recipe, it's definitely a keeper!

Creamy Rice Pudding

Thank you so much for sharing this! I made it for my boyfriend and he absolutely loved it and told me to add it to my permanent recipe collection. I used Jasmine rice, skim milk and added a bit more vanilla. Also, I omitted the use of the second saucepan, and just used the one. My boyfriend asked me to not use raisins, so I didn't and it was still sweet, creamy, fast and easy! I served it warm sprinkled with cinnamon, slivered almonds and shaved coconut. Delicious!

Pasta with Scallops, Zucchini, and Tomatoes

Thank you so much for this recipe! I made it for my boyfriend and he told me again the next day how much he enjoyed it, and he doesn't even really care for scallops! I only made a few changes; I used less tomato, substituted heart-healthy pasta and sauteed minced onions with four cloves of garlic, doubled the crushed red pepper, and used a bit of ground black pepper as well. I have added it to my collection of recipes that I will definitely be making again! Thank you for a healthy and delicious meal!

Baked Potato Soup

This was absolutely delicious!! I followed the advice of others, and doubled the recipe..and I am so glad that I did because this was an amazing soup. I cubed the potatoes and cooked them in the chicken broth for flavor, then added the sauteed onion and garlic with flour, basil, salt/pepper to the broth. I used half heavy whipping cream and half sour cream and stirred that in with the cheese and bacon crumbles. Topped of with a generous dollop of sour cream, and served with Cheddar Bay Biscuits (and meatloaf) a wonderful meal for a cold winter's night! Thanks!! :)

Shepherd's Pie VI

Awesome!I took others'suggestions and added more ketchup, a dash of seasoned salt,pepper,minced garlic and used Worchestire with the meat. I really liked the flavor of the meat. Often, in Shepherd's Pie that I have had the meat was always very bland.I layered a can of peas on top of the meat,and then the mashed carrots. Saving some time, I used two packages of cheddar/sour cream instant potatoes.Threw shredded cheddar on top and popped in the oven. With biscuits,dinner was a hit! Thanks!
